Tasting
Appearance
This white wine reveals a beautiful pale gold robe, subtly enhanced by delicate green highlights.
Nose
The aromatic bouquet opens with notes of perfectly ripe stone fruits, such as pear and quince. The whole is rounded out by fine touches of white flowers and a highly present minerality reminiscent of chalk.
Palate
With a medium body and lovely concentration, the palate seduces with its generous, rounded attack on flavours of citrus and stone fruits. It stands out for its chalky, saline minerality, which stretches the wine towards a long, vibrant and taut finish, enhanced by discreet vanilla notes.
Food and wine pairings
Ideal with fish in sauce or white meats, this wine also pairs perfectly with seafood, such as oysters or pan-seared scallops, as well as with vegetable-rich dishes such as an asparagus risotto.
Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature between 10 and 12°C. It can be enjoyed now or kept in the cellar until around 2030.
The elegance and mineral precision of a great Burgundy wine
The estate
Founded in 1840 by Jean Febvre, a cooper from Montbard, the Simonnet-Febvre House is a historic figure of Burgundy. Acquired by the Louis Latour group in 2003, the estate is now led by Paul Espitalié. The only house to have maintained uninterrupted production of sparkling wines according to the traditional method since its creation, the Maison stands out for its philosophy rooted in terroir, purity and precision. Committed to an ecological transition, Simonnet-Febvre crafts authentic wines through minimal-intervention winemaking.
The vineyard
This wine comes from the "Fourchaume" climat, which is the largest of the Premiers Crus of Chablis. The vines, averaging 40 years of age, thrive on the right bank of the Serein. They benefit from an optimal south-south-west exposure within a natural amphitheatre that protects the vine stocks. The terroir consists of Kimmeridgian clay-limestone soils, particularly rich in marine fossils, giving the wine its signature mineral character.
The vintage
The 2022 growing cycle began with episodes of spring frost that required great vigilance in the vineyards. The season then continued under warmer and drier conditions, limiting disease pressure and allowing for consistent yields. This favourable climate brought the berries to ideal phenolic ripeness, offering a fine balance between the generosity of the fruit and mineral tension.
Winemaking and aging
The vinification of the Chablis 1er Cru "Fourchaume" 2022 is carried out with the aim of preserving the pure expression of the terroir. Fermentation takes place in stainless steel tanks with temperatures rigorously controlled between 18 and 21°C. The wine then benefits from ageing on fine lees for 10 to 12 months. This maturation is carried out 75% in stainless steel tanks and 25% in used oak barrels, which brings a slight complexity without masking the primary aromas.
