Tasting

Colour
This white wine displays a clear, brilliant colour, with a pale yellow to light golden-yellow hue, subtly highlighted by green glints in its youth.

Nose
With great purity, the aromatic bouquet reveals fine complexity. It opens with vibrant notes of citrus fruit, green apple and white flowers such as hawthorn. These are joined by mineral touches of gunflint and flint, along with delicate nuances of hazelnut, marzipan and a subtle oakiness reminiscent of vanilla and fresh butter.

Palate
The palate offers a superb balance between refreshing tension and a generous texture. The acidity stretches the wine, highlighting a very pronounced mineral and saline backbone. The remarkably long finish leaves a pleasant lingering impression of citrus fruit, hazelnut and gunflint.

Food and wine pairing

This great white wine pairs wonderfully with fine fish in butter sauce, pan-seared scallops or creamy poultry dishes. It will also enhance more contemporary dishes such as citrus-marinated fish ceviche, roasted root vegetables or an aged hard cheese like a mature Comté.

Service and storage

This 2023 vintage can be enjoyed in its youth for its freshness, but also has a lovely concentration that will allow it to evolve favourably in the cellar for several years.

Burgundian excellence at the heart of the Côte de Beaune

The estate

Founded in 1982 by Vincent Girardin from two hectares of family vineyards, the house is today a major reference in Burgundy. Based in Meursault, at the heart of the Côte de Beaune, the estate cultivates a vineyard of around 33 hectares, of which some twenty are owned outright, supplemented by very selective grape purchases. Now structured as an SAS, the house is technically overseen by Éric Germain. He brilliantly carries on the estate's style, founded on respect for terroir, practices close to biodynamics, and a constant pursuit of purity.

The vineyard

The grapes come from plots located within the prestigious Puligny-Montrachet appellation. These vines thrive on well-exposed slopes with marl-limestone, very stony soils. The vineyard is managed using environmentally friendly methods, close to biodynamics, without the use of herbicides or insecticides. The harvest is carried out by hand to preserve the integrity and quality of the berries.

Winemaking and aging

The making of this wine follows a minimal-intervention philosophy, guided by the lunar cycle. Fermentation begins naturally through indigenous yeasts. The wine then benefits from extended aging on fine lees, in tanks and oak barrels. The use of new oak remains very moderate, so as not to mask the minerality of the terroir and to preserve the full finesse of the fruit.
