A Chablis Grand Cru combining power and minerality
The estate
The Domaine William Fèvre is now recognized as the largest owner of Grands Crus in Chablis, with 70 hectares of vines spread across 90 plots, including 15.2 hectares of Grands Crus. Since January 2024, the estate has belonged to Domaines Barons de Rothschild Lafite. An environmental pioneer, the estate was the first in Chablis to be certified HVE3 in 2014 and has practiced biodynamic farming since 2010 across all of its premier and grand cru vineyards. Growing exclusively Chardonnay on Kimmeridgian terroir, the William Fèvre estate embodies Chablis excellence.
The vineyard
Grand Cru Bougros is located at the western end of the Côte des Grands Crus de Chablis. The "Côte Bouguerots" plot covers 2.11 hectares within the 6.23 hectares the estate owns in this appellation, representing 49% of the cru’s total surface area. The Chardonnay vines thrive on Kimmeridgian soil made up of alternating marls and marly limestones, mixed with clay and stones at shallow depth. The vineyard enjoys a due-south exposure at the foot of the hillside, on a steep slope exceeding 30%.
The vintage
Winter 2022 in Burgundy was marked by mild, dry conditions. Budbreak took place at the end of March, followed by excellent flowering at the end of May. Harvest began on August 31, making it possible to pick grapes in perfect health, with thick skins and generous pulp, delivering a good juice yield.
Vinification and aging
The vinification of the Chablis Grand Cru Bougros "Côte Bouguerots" 2022 follows the gravity-flow principle, avoiding any pumping. The grapes are pneumatically pressed over a short period of 1h30 to 2h00. Fermentation takes place in stainless-steel vats. Aging lasts 19 months in total: 40% of the cuvée ages in French oak barrels for 5 to 6 months on fine lees, before the whole wine completes its aging in small stainless-steel tanks.
