A powerful, mineral Chablis Grand Cru from Domaine William Fèvre
The estate
Established in 1959 by William Fèvre, the estate is now the largest owner of Chablis Grands Crus, with 78 hectares spread across 90 plots, including 15.2 hectares in Grands Crus. Since January 2024, the estate has been owned by Domaines Barons de Rothschild Lafite, managed by Didier Séguier. An environmental pioneer in Burgundy, the domaine William Fèvre has obtained HVE (Haute Valeur Environnementale) certification, the highest level of environmental certification. The Premiers and Grands Crus have been farmed biodynamically since 2020.
The vineyard
The Valmur climat covers 1.15 hectares, representing 9% of the Chablis Grand Cru appellation. Located in a valley bordering Vaudésir, with a point reaching part of Les Clos, the vineyard benefits from a south/southeast exposure. The Kimmeridgian soil alternates marl and marly limestone, with a deep, brown clay-limestone structure at the bottom of the slope, and a finer, whiter one at the top. This terroir gives the wines their distinctly crystalline minerality.
The vintage
The winter of 2022 in Burgundy was mild and dry, followed by budbreak during the last week of March. Flowering took place at the end of May under good conditions. Summer was hot and sunny, allowing harvest to begin as early as August 31. The grapes were in perfect health, with thick skins and fleshy berries offering a good juice yield.
Winemaking and aging
The Chablis Grand cru "Valmur" Domaine 2022 is vinified using the gravity-flow principle to avoid pumping. The grapes undergo short pneumatic pressing, lasting between 1h30 and 2h00. Fermentation takes place in stainless steel tanks. Total aging lasts 18 months: 40% of the cuvée is aged in French oak barrels for 5 to 6 months on fine lees, before the whole wine completes its aging in small stainless steel tanks.
