The estate
Founded in 1959, Domaine William Fèvre has established itself today as an essential reference in Chablis. Since January 2024, the estate has belonged to Domaines Barons de Rothschild (DBR) Lafite, led by Saskia de Rothschild. The estate spans 78 hectares, including 15.2 hectares in Grand Cru, making it the largest owner of Grands Crus in the region. Under the direction of Didier Séguier since 1998, the estate stands out for its meticulous vineyard practices and its HVE certification, reflecting a strong commitment to the environment.
The vineyard
The Chablis Grand Cru "Valmur" comes from a climat located at the heart of the Grands Crus hillside. This terroir benefits from south/southwest and north/northeast exposure, offering optimal sunshine and excellent natural ventilation. The Kimmeridgian soil, rich in minerals, gives the wine that distinctive minerality that has made the Grands Crus of Chablis so renowned.
The vintage
The year 2020 stands out for its early ripening and sunny character. The hot, dry summer marked the vine’s growing cycle. Despite these generous summer conditions, the wines of the 2020 vintage managed to retain beautiful freshness and great aromatic purity, a defining signature of the Chablis appellation.
Winemaking and aging
The grapes for the Chablis Grand Cru "Valmur" 2020 are harvested by hand. Winemaking follows the principle of gravity to preserve the integrity of the berries. Fermentation and aging take place half in French oak barrels averaging 6 years of age, with the remainder vinified in small stainless-steel tanks. Aging lasts 14 to 15 months, including 5 to 6 months on fine lees, allowing this Burgundy wine to develop complexity while preserving its freshness.
