Tasting

Colour

The colour reveals a deep crimson red hue with violet nuances.

Nose

Aromatic and fragrant, the nose reveals notes of red fruits accompanied by spicy nuances. The bouquet also expresses floral touches and a subtle complexity.

Palate

On the palate, the wine seduces with its silky texture and elegance. The red fruits express themselves with finesse, supported by delicate tannins and a lovely freshness that brings energy to the whole.

Food and wine pairing

This Australian red wine pairs perfectly with grilled red meats, feathered game, or duck breast with spices. It also goes very well with wild mushroom dishes.

Service and storage

The Dry Red N°2 2020 can be enjoyed now or cellared until around 2032. It is recommended to serve it at a temperature between 16 and 18°C.

The estate

Founded in 1969 by Dr Bailey Carrodus, Yarra Yering is a pioneering estate in the Yarra Valley in Victoria. Today, the estate is run by winemaker Sarah Crowe, who continues the excellence of this historic property. The vineyard spans approximately 90 acres and is farmed without irrigation, following sustainable viticulture principles. Yarra Yering is renowned for producing elegant and refined wines that authentically express the terroir of this celebrated Australian wine region.

The vineyard

The vineyard for the Dry Red N°2 is located in the Warramate foothills, in the Yarra Valley. The vines are dry-grown, without irrigation, on ancient soils with excellent drainage. The north-facing exposure and altitude protect the vines from spring frosts while promoting optimal grape ripening. The naturally low yields, limited to one to two tonnes per acre, result in fruit of remarkable aromatic concentration.

The vintage

The 2020 vintage was characterised by a cool year marked by unstable weather conditions. These conditions led to low yields but produced grapes of exceptional quality, concentrated and endowed with a lovely natural freshness.

Winemaking and aging

The Dry Red N°2 2020 is vinified using traditional methods that respect the fruit. After a hand harvest, the grapes are fermented in the estate's iconic "tea chest" fermenters. The wine is then aged for 15 months in French oak barrels, 30% of which are new, refining its structure while preserving its aromatic expression.
