Albert Bichot : Chablis Grand cru "Moutonne" Dom. Long-Depaquit Monopole 2023

This classic wine boasts moreish aromas of Mirabelle plums touched with honey, ‘the beginning of apricot and quince’ according to director Louis Gimonnet. The palate has marvellous concentration and depth of flavour, balanced acidity, and superb elegance and finesse. This unique 2.35ha monopole lies in an amphitheatre, mostly in Grand Cru Vaudésir but overlapping into Les Preuses. The grapes are hand-harvested, gently crushed, fermented in stainless steel tank and old cask (25%) before an extended maturation.
