Tasting
Appearance
The wine reveals a bright pale gold hue, enhanced by delicate silvery highlights.
Nose
The nose opens with intense minerality reminiscent of gunflint and flint stone. It then unveils a complex bouquet blending citrus aromas, such as pink grapefruit and lemon, with floral notes of elderflower. Subtle hints of white fruits, pineapple and toasted bread further enrich this aromatic palette.
Palate
The attack is remarkably fresh, giving way to a broad and unctuous palate. Carried by firm acidity and a crystalline texture, this white wine expresses saline and fruity flavours, underpinned by discreet oak. The finish is long, lingering and delicately smoky.
Food and wine pairings
Ideal as an aperitif, this great French white wine beautifully enhances seafood, warm oysters and shellfish. It also pairs wonderfully with cooked fish, white meats in cream sauces such as blanquette de veau, as well as aged goat cheeses like the renowned Crottin de Chavignol.
Serving and cellaring
Endowed with fine structure and great concentration, Sancerre "La Demoiselle" 2025 can be enjoyed in its youth but also boasts excellent ageing potential, allowing it to evolve harmoniously in the cellar until around 2033.
The expression of an exceptional terroir by Alphonse Mellot
The estate
Located in the heart of the village of Sancerre, in the Loire Valley, the Alphonse Mellot estate embodies a true winemaking dynasty whose historical roots date back to 1513. However, the creation of the modern entity as we know it dates from 1969. Today, the property is run by Alphonse Mellot Jr, representing the nineteenth generation, alongside his sister Emmanuelle. Committed to demanding and environmentally respectful viticulture, the estate stands out for its constant quest for purity and precision, elevating its cuvées among the most prestigious of the appellation.
The vineyard
The cuvée comes from a unique plot located on the heights of the Sancerre appellation. This rare terroir, composed of flint clays, slopes steeply eastward toward the river. Benefiting from a north-easterly exposure that preserves a beautiful freshness, these old vines are farmed according to the principles of organic and biodynamic agriculture. Yields are strictly controlled and the harvest is carried out by hand in small crates in order to preserve the integrity of the berries.
Winemaking and ageing
The winemaking of Sancerre "La Demoiselle" 2025 is the subject of meticulous care. After rigorous sorting, fermentation takes place in small-capacity wooden vats (15 hectolitres). The wine then benefits from an extended ageing of approximately ten months on fine lees in these same containers, promoting micro-oxygenation and roundness. The ageing concludes with a blending period of at least two to three months before bottling.
