Decanter

A fabulous Mouton with real personality and character and much more seductive than other wines from Pauillac this year. Dark fruit but cool, black cherries and berries with cola and mint touches. Juicy and upfront – immediately salivating in terms of fruit and acidity with gorgeous tannins, chalky, filling but soft not at all dry, fleshy but not too ripe. Intense, voluptuous, almost sensual and not at all austere despite the high percentage of Cabernet. One of the purest expression of what Cabernet can taste like on this site. Velvety, I just adore this for its frankness. Grippy, exciting, full of promise and energy. Wow. A potential 100-point wine.

Smoke, cigar box, flowers, Indian spices, cassis, blackberries, espresso, licorice, forest leaves and mint fill the aromatic profile. But here, it is the palate that owns the night with its opulent, flamboyant, luscious, and vibrant personality. Even with all those showy characteristics, concentration, and intensity, the wine manages to feel light on its feet. By the time you have emptied your glass, the wine somehow gained weight, and the tannins turned to velvet, which is perfect to allow you to enjoy the seemingly, never ending finish. The keys to the vintage came from the combination of summer draught, paired with the rains arriving in late August at the perfect moment, helping to aid in the maturity in the grapes, which shaped the vintage characteristics. The wine consists of 98% Cabernet Sauvignon and 2% Merlot, making this the highest percentage Cabernet Sauvignon ever used in the blend.13.1% ABV, 3.76 pH. 52% of the harvest was placed into the Grand Vin. With 98.2% Cabernet Sauvignon, the share of this grape variety breaks all records. Something never before seen at Mouton. “The 100% Cabernet Sauvignon is brilliant,” explains Jean-Emmanuel Danjoy, “but the 1.8% Merlot allowed us to better rein in its ambitions and bring additional support, adding complexity in terms of both freshness and power.” With aeration, the ageing in 100% new oak shows itself, but not in an overbearing way. It simply highlights its main strength: enhancing the whole aromatic profile and acting as a backbone. The definition is precise, exacting, subtle and true to Mouton, though perhaps with a slightly more contemporary touch—more seamless, more integrated. Slightly suave on the attack, the wine gradually reveals itself. It does not seek to flaunt the power it holds, but to carry it from the opening to the finish, thanks to a subtle acidity working in the background. The tannins, remarkably fine, underscore their suave, subtle side with a leitmotif of calm strength, yet still lively. A Mouton ready to dance, like the 1999 label that embodies bursts of enthusiasm, but with more vigor and density. It is more Mouton than ever, and yet it is emancipated, conquering, enterprising, and ready to span the decades ahead to convey messages dedicated to its grandeur and authenticity. It is a thing of beauty and will gain even more definition and power, but it already asserts its greatness today without the slightest hesitation. It aptly reminds us that power does not preclude finesse and subtlety.

Deep, intense dark red color with purplish highlights. Very aromatic nose, refined, fruity, floral and distinguished. Notes of red fruits and vanilla. Becomes deeper and spicier with a swirl of the glass. Precise on the attack, very aromatic through the mid-palate, with real class to the texture, the wine develops with power and is a little more austere than expected. Great, sappy length, with a touch of tannic astringency sitting above the fresh, creamy flavor rather than underneath it. Ageing could change it. Blend: 98.2% Cabernet Sauvignon (a record), 1.8% Merlot. Alcohol: 13.1% – pH: 3.76. Yield: 29 hl/ha. Ageing: 100% new oak barrels for 18 months. Harvest: September 5 to 20.

Tasting

Nose
The bouquet reveals immediate aromatic depth, marked by remarkable ripeness. It unveils subtle notes of small black fruits, blackcurrant and sun-drenched blackberries, all delicately underlined by hints of mocha and graphite, true signatures of the estate.

Palate
The wine offers a fleshy, ample texture of beautiful intensity, supported by remarkable tension. The tannins are dense, velvety and wonderfully precise. The Cabernet Sauvignon, largely predominant, expresses here all the grandeur and elegance of its terroir.

Food and wine pairings

This great wine pairs wonderfully with roasted or grilled red meats, such as a rib of beef, a ribeye steak or lamb cutlets. It also brilliantly accompanies hearty slow-cooked dishes, as well as recipes showcasing mushrooms or truffles, such as a forest mushroom risotto.

Serving and cellaring

To fully enjoy this Château Mouton Rothschild 2025, it is recommended to serve it at a temperature between 16 and 18°C. Although this vintage can be savoured younger than its predecessors thanks to its balance, it retains the exceptional ageing potential worthy of its status.

The estate

The history of the famous Château Mouton Rothschild officially begins in 1853, when Baron Nathaniel de Rothschild acquired the estate in Pauillac, in the Bordeaux region. Elevated to the rank of Premier Cru Classé in 1973 thanks to the efforts of Baron Philippe de Rothschild, the property embodies viticultural excellence. This legendary vineyard continues to produce wines of exceptional quality, perpetuating a historic legacy and a savoir-faire unique in the world.

The vineyard

Located on the famous Pauillac plateau, the vineyard covers 82 hectares in production. The vines, with an average age of 65 years, thrive on deep, poor and particularly well-draining gravel soils, resting on a clay-limestone bedrock. This exceptional terroir, reaching nearly 29 metres in altitude, benefits from an ideal southern exposure and a privileged location between the Atlantic Ocean and the Gironde estuary. The harvest is carried out entirely by hand in small crates in order to preserve the integrity of the berries.

The vintage

The year began with a mild winter and a slight water deficit, followed by a particularly rainy April. Spring and summer were then marked by intense summer heat that lasted until the end of August. At that time, welcome rainfall refreshed the vines, allowing ideal ripening. The growing cycle was paced by bud break on 31 March, flowering at the end of May and veraison at the end of July. The early harvest took place from 5 to 20 September, yielding healthy, highly concentrated grapes, despite reduced yields on the most free-draining plots.

Vinification and ageing

After gentle extractions aimed at preserving the brightness of the fruit, this Château Mouton Rothschild 2025 benefits from meticulous ageing. It matures for 18 months exclusively in new barrels (100%), thus refining its structure and aromatic complexity. Alcohol content: 13.1% vol.
