Tasting

Appearance
This wine reveals a beautiful pale yellow hue, subtly illuminated by green highlights.

Nose
The aromatic bouquet opens with scents of tropical fruits, reminiscent of pineapple and white peach. It is enriched by floral notes of great freshness, all underpinned by a minerality that is highly characteristic of its terroir.

Palate
The attack offers a superb balance between fine tension and a generous texture. The structure proves to be both lively and rich, leading to a persistent and lingering finish, underscored by delicate mineral and smoky notes.

Food and wine pairings
This white wine pairs wonderfully with fresh oysters or grilled fish such as sea bass and turbot enhanced with herbs. It also sublimates shellfish such as lobster or shrimp, as well as white meats in creamy sauces or a fresh goat cheese.

Serving and cellaring
To fully appreciate this vintage, it is recommended to serve it well chilled, at a temperature between 10 and 12°C.

The refinement and balance of a white wine from the Médoc

The estate
Founded in the 18th century and acquired in 1917 by the Cordier family, Château Talbot is a prestigious wine estate located in Saint-Julien-Beychevelle, on the Left Bank of Bordeaux. Today managed by Nancy Bignon-Cordier, alongside Jean-Pierre Marty and Jean-Michel Laporte, this Left Bank estate of Bordeaux is renowned for its subtle, intense and balanced wines.

The vineyard
Caillou Blanc 2025 comes from a specific vineyard extending over 6.1 hectares. The vines, with an average age of 46 years, thrive on a terroir of Médoc gravels resting on a clay subsoil. Planted at a density of 7,700 vines per hectare, the vineyard is trained using the double Guyot Médocain pruning method, with grass cover between the rows to preserve the soils.

Winemaking and aging
The harvest of Caillou Blanc 2025 is carried out by hand, followed by rigorous sorting directly in the vineyard during the late-August picking. Vinification takes place entirely in barrels, 30% of which are new oak. Finally, the wine benefits from aging on the lees with regular bâtonnage for a period of 8 months. Alcohol: 13% vol.

88% Sauvignon Blanc and 12% Sémillon.
