Colour
This red wine reveals a deep ruby hue, enhanced by delicate violet highlights.

Nose
Beautifully complex, the bouquet develops with aeration to reveal typical garrigue aromas, blending thyme, rosemary and fennel with notes of ripe black fruit such as blackberry and cherry. Touches of bay leaf and subtle smoky nuances complete this rich olfactory palette.

Palate
The attack is fresh and dynamic, opening onto a full-bodied, well-structured palate. The wine expresses delicious notes of kirsch and sweet spices, supported by silky, perfectly integrated tannins. The whole offers a superb balance between fruit power, concentration and great elegance.

Food and wine pairing

This wine pairs wonderfully with world cuisine, grilled meats or herb-roasted lamb. It will also complement flavourful poultry, mature cheeses and certain desserts.

Service and storage

To fully appreciate the Grand Maître 2022, it is recommended to serve it at a temperature between 16 and 18°C, taking care to open it 30 to 60 minutes before tasting. This wine can be enjoyed now and will continue to evolve favourably until around 2030.

The authentic and refined expression of a great La Clape wine

The estate

Founded in the 12th century by the Hospitallers of Saint-Jean-de-Jérusalem, the Commanderie de Saint-Pierre la Garrigue is a historic estate located in the Languedoc. Left abandoned for several years, the property was purchased in 2005 by Jehan de Woillemont, the current owner, who undertook a meticulous restoration of the estate. Spanning sixty hectares, this vineyard stands out for its environmental commitment, crowned by organic certification obtained in 2022.

The vineyard

Located approximately one kilometre from the Mediterranean Sea, the vineyard benefits from the exceptional terroir of the La Clape appellation. Rising to around forty metres in altitude, the vines flourish on a mosaic of clay-limestone soils, pure limestone and red earth. The estate is farmed organically, within a preserved environment where biodiversity is encouraged by the presence of garrigue, olive trees, almond trees and maritime pines. The maritime influence helps temper summer heat, promoting optimal berry ripening.

Winemaking and aging

The estate's philosophy favours minimal intervention in the cellar. The Grand Maître 2022 is vinified using whole-bunch fermentation, allowing for the extraction of a fresh tannic structure while preserving aromatic brightness. Aging is then carried out using a hybrid approach: part of the wine rests in inert tanks to preserve the fruit, while the other part is aged in French oak barrels of 225 and 500 litres to add further complexity.
