Tasting
Colour
The colour reveals a pale to golden yellow hue, enhanced by brilliant golden highlights and subtle greenish tinges.
Nose
Beautifully complex, the nose exudes aromas of white flowers such as acacia, mingled with notes of citrus and stone fruit. Delicate mineral touches of gunflint blend harmoniously with hints of toasted hazelnut and brioche.
Palate
The attack is lively and precise, revealing a palate of great mineral freshness. The mid-palate unfolds flavours of white-fleshed fruit and citrus, underpinned by a saline backbone and subtle buttery, vanilla notes. The finish is long and lingering.
Food and Wine Pairing
This white wine pairs wonderfully with refined seafood such as scallops, grilled langoustines or white-fleshed fish. It also perfectly accompanies poultry in cream sauce, asparagus-based dishes or aged hard cheeses such as Comté.
Service and Storage
To fully appreciate this Saint-Aubin 1er Cru "En Remilly" 2022, it is recommended to serve it at a temperature of 13°C. With its lovely structure, this wine can be enjoyed now but will continue to evolve in the cellar until around 2032.
The Mineral Precision and Elegance of a Great White Burgundy
The Estate
Located in France, at the heart of Burgundy in Chassagne-Montrachet, Domaine Bader-Mimeur was officially founded in 1919 following Charles Mimeur's acquisition of the Château de Chassagne-Montrachet. Backed by a centuries-old family heritage, this 8-hectare estate stands out for its environmentally responsible approach, certified High Environmental Value level 3. Today, the fifth generation, embodied by Nathalie Bernard and her brother Sébastien Fossier, runs the estate. They carry on the tradition of the grower-winemaker, crafting wines that authentically express the richness of their terroirs.
The Vineyard
The "En Remilly" plot, covering around 0.25 hectares, lies within the Saint-Aubin appellation. Facing due south and sheltered from frost, the vines, aged between 50 and 75 years, thrive on the mid-slope in shallow, clay-limestone soils dotted with small white stones. The vineyard is farmed using sustainable practices, without herbicides, with mechanical soil work and meticulous hand-harvesting to ensure the highest fruit quality.
The Vintage
2022 stood out for its particularly mild and dry weather conditions. Spared from spring frost, the growing cycle benefited from exceptional sunshine and warm temperatures throughout the summer. This dry, sunny climate allowed the berries to reach optimal concentration and perfectly balanced ripeness by the time harvest began in late September.
Winemaking and Aging
After rigorous sorting, the whole grapes undergo slow, gentle pneumatic pressing. The juice is then naturally clarified through overnight cold settling. The must is transferred by gravity into French oak barrels, where fermentation begins spontaneously thanks to indigenous yeasts. This Saint-Aubin 1er Cru "En Remilly" 2022 is aged for around ten months in barrels (20% new oak), with regular lees stirring to enrich the wine's texture.
