Tasting
Appearance
The robe reveals a pale to light yellow hue, brightened by shimmering green and silver reflections that highlight its beautiful clarity.
Nose
The aromatic bouquet opens with enticing notes of white flowers and white tea. It then unveils orchard fruit aromas such as apple and pear, enriched with hints of mandarin, nectarine and a subtle smoky nuance.
Palate
Ample and deep, the palate offers a lovely fruity substance underpinned by remarkable mineral tension. A slight austerity blends with pleasant acidity, leading to a long and precise finish, marked by a zesty bitterness and a delicate tannic presence.
Food pairings
This white wine pairs wonderfully with noble fish in creamy sauces, such as turbot or sea bass, as well as with delicate shellfish like langoustine. It also perfectly accompanies a Bresse poultry with morels, a roasted veal rump or soft cheeses such as a truffled brie.
Serving and cellaring
For optimal tasting of this wine, it is recommended to serve it at a temperature between 11 and 13 °C in wide tulip-shaped glasses. In its youth, a light decanting of 30 to 45 minutes is advised. This wine can be enjoyed now but will continue to evolve favourably until around 2037.
A great white Burgundy wine by Domaine Ballot-Millot
The estate
The family's winegrowing history began in 1630, but the Domaine Ballot-Millot was officially founded at the beginning of the 18th century. Located in Meursault, in the heart of the Burgundy region, this estate of just over ten hectares is today led by Charles Ballot. Under his direction since 2000, the estate has resolutely embraced environmentally friendly viticulture, using sustainable practices and no chemical weeding. Renowned for its terroir-driven white wines, the estate skilfully combines Burgundian tradition with modern oenological techniques to produce cuvées of great purity.
The vineyard
The cuvée comes from the Tête du Clos plot, located within the Chassagne-Montrachet 1er Cru Morgeot climat. This terroir is distinguished by its white, stony limestone soils, low in clay, which impart a unique tension to the grapes. The vines, around ten years old, are tended with rigorous care, including regular ploughing and exclusively manual harvesting with meticulous sorting directly in the vineyard.
The vintage
The 2022 year is regarded by the estate as a very fine success. This vintage offers a satisfying harvest volume and stands out for its excellent balance between berry ripeness and very fine acidity, ideal conditions for crafting wines with ageing potential.
Vinification and ageing
The making of this wine begins with a slow and gentle pressing. Fermentation takes place in a cold cellar thanks to indigenous yeasts. The wine then benefits from a long ageing on lees, without any bâtonnage, for approximately twelve months in oak barrels (of which a quarter are new). Ageing concludes with a period of around six months in stainless steel tanks before bottling, without unnecessary filtration.
