Tasting

Colour
The colour reveals a hue ranging from pale to deep gold, with subtle green highlights.

Nose
The nose opens with aromas of orchard fruit and yellow fruit such as ripe pear and stone fruit. With aeration, it reveals notes of honey, smoke and beeswax, before evolving toward hints of toasted bread and roasted nuts.

Palate
On the palate, this white wine is full-bodied with a concentrated core of ripe fruit. The texture is creamy and voluptuous, perfectly balanced by lovely acidity. The whole is complex and harmonious, extending into a long finish with mineral and toasted accents.

Food and Wine Pairing

This wine pairs wonderfully with fine shellfish such as lobster or langoustines, as well as with foie gras. It also perfectly accompanies white meats in cream and mushroom sauce, goat cheeses, or more exotic and spicy dishes such as fish tagine or sushi.

Service and Storage

To fully appreciate the Pouilly-Fuissé Village "Fine Joséphine" 2023, it is recommended to serve it at a temperature between 11 and 13°C. This wine is built for aging and can rest in the cellar to be enjoyed from around 2028 to 2042.

The Mineral and Complex Expression of a White Burgundy Wine

The Estate

Founded in 1945 in the village of Fuissé in France, Domaine Cordier Père et Fils is a benchmark in Burgundy. After the work of Roger Cordier, it is now Christophe Cordier who runs the estate. Under his leadership, the estate stands out for its quality standards and rigorous yield management. Spanning 31.5 hectares across numerous plots, the vineyard is certified organic and biodynamic. This estate is also the first European wine estate to obtain B Corp certification, underscoring its environmental commitment.

The Vineyard

The cuvée comes from a tiny 0.24-hectare plot located on the climat En Carmentrant in Vergisson, at the heart of the Pouilly-Fuissé appellation. East-facing and perched at around 300 meters of altitude, the very old vines, nearly 90 years old, thrive on white limestone soil that is very low in clay. This unique terroir, combined with extremely low yields, promotes optimal grape concentration while preserving a lovely freshness.

The Vintage

The year 2023 was characterized by warm weather conditions, allowing the grapes to reach an optimal level of ripeness and full concentration.

Winemaking and Aging

The grapes for the Pouilly-Fuissé Village "Fine Joséphine" 2023 are harvested by hand with rigorous sorting. The whole clusters are gently pressed, then the juice is transferred by gravity to avoid any mechanical pumping. Fermentation is triggered by indigenous yeasts. The wine is aged for 24 months on its original lees: the first twelve months take place in 350-liter Burgundian oak barrels, followed by a further twelve months in inert steel tanks. Bottling is done by gravity, with minimal fining and filtration.
