Decanter

This parcel selection of the best of the Clos du Cellier aux Moines is among the very best wines in the Côte Chalonnaise and can stand with the top wines from anywhere in the Côte d'Or. It boasts a fresh, bright mulberry and black cherry fruit character, with a burst of limestone minerality and a distinct hint of violets – 'less chocolate, more flowers', I wrote on the day. The texture is tannic and firm, but this will be a superb wine with moderate cellaring. Try it seven years after the harvest and drink it over the next 20.

Tasting

Colour
Beautifully clear, the colour reveals a ruby hue of medium to strong intensity, enhanced by purplish highlights typical of a young red wine full of vitality.

Nose
The first olfactory impression offers a delicate, crisp expression of red fruit, dominated by raspberry and fresh cherry, all underscored by seductive floral touches. After a little aeration, the bouquet gains in complexity to reveal scents of damp earth, white pepper and violet, along with herbal nuances reminiscent of sage, subtly rounded off by a hint of brioche.

Palate
The attack is marked by great fruit purity and remarkable freshness. The mid-palate unfolds a concentrated texture that is silky and velvety, supported by a very fine tannic structure. The whole is carried by a lovely mineral tension that draws the wine towards a long, complex and elegant finish, where delicious notes of dark fruit resonate.

Food and wine pairing

This great red wine from France is a superb match for quality meats, whether grilled or roasted, such as a rib of beef or a fillet mignon with a wine reduction sauce. It also pairs wonderfully with feathered game such as roast duck or braised pheasant, as well as with mature hard cheeses like an aged Comté or characterful washed-rind cheeses.

Serving and storage

To fully appreciate the Givry 1er Cru "Clos du Cellier aux Moines Les Dessus" 2023, it is recommended to serve it between 16 and 18°C in large, wide-bowled glasses. Decanting for forty-five minutes to an hour before tasting is advised. This wine, built for ageing, can continue to develop in the cellar and will evolve favourably to be enjoyed until around 2040.

The mineral elegance of a great Burgundy wine from a historic terroir

The estate

Founded around 1130 by Cistercian monks, the Domaine du Cellier aux Moines is a major historic figure in Burgundy. Acquired in 2004 by Philippe and Catherine Pascal, this ten-hectare vineyard has undergone a spectacular renaissance. Now run by Philippe Pascal alongside his family, the estate stands out for its innovative underground gravity-fed facilities and its deep commitment to the environment. Under the technical direction of Guillaume Marko, the estate produces wines of great precision, certified organic and biodynamic.

The vineyard

Located in the Côte Chalonnaise, the vineyard benefits from a privileged south and south-east facing exposure, sheltering the vines from cold winds while maximising sunlight exposure. The terroir of the Givry appellation rests on clay-limestone soils rich in minerals. The specific Dessus plot, standing at the top of the slope, is distinguished by a high proportion of hard oolitic limestone, giving the grapes exceptional tension and minerality. The vines, grown from a quality massale selection, receive meticulous care, including the braiding of the shoots to control vigour and concentrate aromas.

The vintage

2023 was marked by overall favourable weather conditions, offering good circumstances for vine growth. Despite some contrasting weather challenges throughout the growing cycle, the season achieved a perfect balance, resulting in a healthy and high-quality harvest.

Winemaking and ageing

The grapes are harvested by hand with extremely rigorous sorting carried out directly in the vineyard, followed by a second sorting on a sorting table at the cellar. The winemaking process for the Givry 1er Cru "Clos du Cellier aux Moines Les Dessus" 2023 takes place in a revolutionary underground cellar operating entirely by gravity, thereby avoiding the use of mechanical pumps to preserve the integrity of the fruit. The vinification is gentle and minimally interventionist, followed by careful ageing in oak barrels that softens the tannins and brings subtle aromatic complexity.
