Tasting notes

Colour
The colour reveals a brilliant violet hue, underscored by deep garnet reflections.

Nose
Powerful and concentrated, the nose exudes an intensely fruity bouquet, blending aromas of blackcurrant, blueberry and small red fruits such as strawberry, raspberry and cherry.

Palate
The attack is smooth and supple, evolving into a beautifully round palate with a creamy texture. There is a remarkable balance between taut freshness, an explosion of fruity flavours and fine, silky tannins, leading into a wonderfully light finish.

Food and wine pairing

This red wine pairs beautifully with roasted red meats such as oven-roasted lamb or tournedos Rossini, as well as with poultry in a mushroom sauce. It also perfectly complements cured meats, particularly pork spider steak or grilled bacon, along with aged hard cheeses and traditional Catalan dishes.

Service and storage

For optimal enjoyment, Les Sorcières 2025 should be served at a temperature of around 17°C. This wine can be enjoyed in its youth but will continue to evolve favourably, drinking well until around 2030.

The authentic and generous expression of a Roussillon wine

The estate

Founded in 1998 by Hervé Bizeul, a renowned former sommelier, Domaine du Clos des Fées quickly established itself as a key reference in Roussillon. Starting out with limited resources and just a few hectares, the estate now spans around fifty hectares. Still led by its founder and current owner, Hervé Bizeul, the domaine stands out for its approach combining innovation, environmental respect and an authentic expression of terroir. Thanks to a rigorous selection process, Domaine du Clos des Fées produces cuvées renowned for their excellence.

The vineyard

Located in the Agly valley, near the village of Vingrau, the vineyard thrives at the heart of a mountainous cirque between 200 and 350 metres in altitude. The vines, cultivated according to sustainable and organic farming principles, are planted on south-facing hillsides. This complex terroir of the Côtes du Roussillon is mainly composed of clay-limestone soils, dotted with outcrops of white limestone and pockets of pure clay, benefiting from a Mediterranean climate with continental influences.

The vintage

The year 2025 fits within a climatic sequence specific to the region, offering weather conditions that allowed the berries to reach optimal ripeness at harvest time.

Winemaking and aging

The grapes are hand-harvested and meticulously sorted in the vineyard. The winemaking process for the Les Sorcières 2025 cuvée begins with a cold pre-fermentation maceration in stainless steel tanks. Fermentation then takes place over 15 to 21 days with daily pumping-over and strict temperature control, followed by a complete malolactic fermentation. Finally, the wine undergoes aging in tank on fine lees for a period of 8 months.
