Tasting

Appearance
The robe reveals an intense ruby red colour.

Nose
The nose unveils delicate aromas of fresh red fruits mingled with spicy notes, subtly underlined by woody and smoky touches.

Palate
Ample and structured, the palate offers lingering flavours where fruit and oak come together. The tannins are supple, leading to a refined, elegant and highly complex finish.

Food and wine pairings

This red wine pairs ideally with flavourful poultry such as duck or goose, as well as feathered game. It also perfectly accompanies slow-cooked meats such as beef in sauce, roast pork or a traditional coq au vin. When it comes to cheeses, it enhances both a characterful Époisses and soft-ripened cheeses such as Brie or Camembert.

The estate

Founded in 1825 by Pierre Faiveley in Nuits-Saint-Georges, Domaine Faiveley is a true institution in Burgundy. Today led by Erwan Faiveley, representing the seventh generation, and his sister Eve, the estate oversees a vast vineyard of around 120 hectares spread across the Côte de Nuits, the Côte de Beaune and the Côte Chalonnaise. Both a wine estate and a négociant house, this historic family-run business stands out for its strong environmental commitment, illustrated by the conversion of all its vines to organic farming, with official certification expected in 2025.

The vineyard

The Gevrey-Chambertin 1er Cru "La Combe Aux Moines" comes from a historic 1.03-hectare parcel, once cultivated by the monks of Cluny. Located on east-facing slopes, the vines benefit from a terroir composed of white marl and fossil-rich clay. The plantings in this parcel span several decades, from 1933 to 2017, offering a wonderful diversity of age and great complexity in the grapes.

The vintage

The 2024 vintage was marked by particularly challenging weather conditions. The growing cycle had to contend with exceptional rainfall, frost episodes, localised hail and reduced sunshine. These climatic challenges resulted in strong disease pressure and a significant drop in yields. Nevertheless, the harvested grapes made it possible to produce wines of lovely freshness, accessible and endowed with a crisp acidity.

Winemaking and ageing

The Gevrey-Chambertin 1er Cru "La Combe Aux Moines" 2024 is aged for 16 months in fine-grained French oak barrels with a moderate toast. The oak breakdown ranges from 40 to 50% new barrels and 50 to 60% one-wine barrels, preserving the unique expression of the terroir without masking it.
