Tasting notes
Colour
Beautifully limpid, this wine displays a bright golden hue, ranging between pale lemon yellow and subtle light green highlights.
Nose
The nose opens on a mineral, restrained profile. It exudes aromas of citrus fruit, crisp yellow apple and pear, delicately intertwined with notes of iodine, nutmeg, fresh bread and a fine smoky touch.
Palate
On the palate, the wine reveals concentrated fruit and a beautiful breadth, supported by lively acidity. The lemony and stone-fruit flavours extend into a long, persistent and saline finish, marked by a chalky structure typical of its terroir.
Food and wine pairing
This wine pairs wonderfully with firm-fleshed fish, shellfish or a cod ceviche with citrus. It will also elevate poultry in a creamy sauce or a matured goat cheese.
Service and storage
For optimal enjoyment, it is recommended to serve this Saint-Aubin 1er cru "Clos de la Chatenière" 2020 at a temperature of between 12 and 14°C in a medium-sized white wine glass. This wine can be enjoyed now and will continue to evolve favourably until around 2032.

The estate
Officially founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is a major reference in Burgundy. Now run by his son, Olivier Lamy, who took over in 1996, the estate spans 18 hectares. The domaine is world-renowned for its innovative approach, notably its experiments with high-density planting, and its commitment to sustainable viticulture without herbicides. Olivier Lamy crafts wines of great purity, precisely expressing the complexity of their terroirs.
The vineyard
This cuvée comes from a 1.25-hectare plot located within the Saint-Aubin appellation, planted in 1964. This distinctive terroir stands out for its steep 40% south-facing slope, overlooking the hamlet of Gamay. The vines thrive on shallow, stony soils rich in iron oxides, resting on a base of hard limestone bedrock.
The vintage
2020 was marked by extreme climatic conditions, with a dry, sunny growing season and temperatures above the ten-year average, accompanied by a significant rainfall deficit. These conditions favoured early ripening of the berries, prompting the estate to begin harvesting as early as August 20th.
Winemaking and aging
After gentle pneumatic pressing and settling, fermentation of the Saint-Aubin 1er cru "Clos de la Chatenière" 2020 begins with indigenous yeasts in stainless steel tanks at low temperature. Malolactic fermentation takes place on the lees. The wine is then aged for 24 months, mostly in large-format used oak barrels with a maximum of 15% new oak, before resting for six months in stainless steel tanks.
