Appearance
A beautiful garnet red colour reveals itself in the glass.

Nose
The nose displays great aromatic complexity, opening with notes of ripe black fruits, strawberry and raspberry. It then evolves towards hints of liquorice, garrigue herbs, tapenade and chocolate, subtly underlined by nuances of undergrowth and a touch of oak.

Palate
On the palate, this wine offers a perfect balance between power and silkiness. The texture is built on fine, grainy tannins, accompanied by moderate acidity. The long, flavoursome finish prolongs the experience with delicate fruity and spicy notes.

Food and wine pairings

This wine pairs wonderfully with full-flavoured meats such as roast duck, young wild boar stew, or beef dishes like a rib of beef or tournedos. It will also enhance slow-cooked dishes seasoned with Mediterranean herbs, fine charcuterie, or a platter of aged cheeses, such as a Saint-Nectaire.

The elegance and depth of a red wine from Minervois

The estate

Founded in 1996 with the production of its first vintage, Domaine Jean-Baptiste Senat is located in Trausse, in the heart of the Languedoc. Today run by Jean-Baptiste and Charlotte Senat, this 15-hectare estate has established itself as a true pioneer of natural winemaking in the region. Driven by an artisanal philosophy, the estate favours organic cultivation methods and a minimal-intervention approach to winemaking. Domaine Jean-Baptiste Senat is thus committed to producing digestible and elegant wines that authentically reflect the richness of their terroir.

The vineyard

Located within the Minervois appellation, the vineyard extends across the foothills of the Montagne Noire. The vines, trained in goblet style to protect them from the summer heat, thrive on a mosaic of soils composed of clay-limestone and siliceous garrigue lenses. Yields are strictly limited to 30 hectolitres per hectare and the harvest is carried out exclusively by hand to ensure a rigorous selection of the berries. This exceptional terroir is home to very old vines, including hundred-year-old Carignan stocks and 60-year-old Grenache vines.

Vinification and ageing

The vinification of the Bois des Merveilles 2023 is carried out using whole bunches, thereby preserving the integrity and freshness of the grapes. Fermentation, conducted exclusively with indigenous yeasts, takes place over about fifteen days. The wine then benefits from extended ageing of 20 months in oak barrels, allowing it to develop its full complexity before being bottled at the estate.
