Tasting
Colour
Brilliant and luminous, the colour reveals a hue ranging from light ruby to soft garnet.
Nose
Elegant and complex, the bouquet opens with aromas of red fruits such as cherry, raspberry and redcurrant, enhanced by floral touches of violet. On aeration, mineral notes, sweet spices and earthy nuances emerge.
Palate
Boasting a silky texture and remarkably fine tannins, the palate reveals a perfectly balanced structure. Lovely acidity brings tension and freshness, highlighting flavours of fresh red fruit, crushed stone and delicate herbal notes. The finish stands out for its remarkable, yet light, persistence.
Food and wine pairing

The estate
Founded in 1997, Domaine Nicolas Rossignol is a leading name in Burgundy. Representing the fifth generation of winemakers in his family, Nicolas Rossignol now runs this estate of around seventeen hectares, now based in Beaune. Drawing on international experience and a deep respect for nature, the winemaker cultivates his vines according to the principles of sustainable farming, drawing inspiration from biodynamics and the lunar calendar. The estate is distinguished by its commitment to enhancing the terroir through traditional methods, ruling out any chemical weed control in favour of ploughing the soil.
The vineyard
Although technically located in the commune of Meursault, the Santenots climat produces great red wines classified as Volnay Premier Cru. This exceptional terroir of around thirty hectares benefits from a gentle slope and an eastward exposure, ensuring ideal morning sunlight. The vines flourish between 230 and 340 metres in altitude on deep clay-limestone soils. The presence of marl, silt, schist and oolitic limestone gives the grapes a distinctive minerality and a perfect balance.
The vintage
The year 2022 stands out as one of the warmest and driest in Burgundy since 1947. After a mild March and a cool start to April that spared the buds from frost, a particularly warm May led to very early flowering. Although June brought abundant rainfall, the summer proved dry and sunny, with cool nights. Timely rains in mid-August allowed ripening to be completed in optimal conditions ahead of an early harvest, yielding berries in impeccable health.
Winemaking and ageing
For this Volnay 1er Cru "Santenots" 2022, the grapes are hand-harvested into small crates to protect the berries. Fermentation begins naturally through indigenous yeasts, accompanied by regular punching down and pumping over. Ageing takes place on fine lees for ten to twenty months in carefully selected oak barrels, with a suitable proportion of new wood. Malolactic fermentation is deliberately delayed until spring to enhance aromatic complexity. Finally, bottling is carried out without fining or filtration, in keeping with the lunar calendar.
