Description

Characteristics and Tasting Tips for the Les Cistes 2016 Cuvée from Peyre Rose

Tasting notes

Appearance
This wine displays a beautiful vivid red colour, enhanced by deep, dark and brilliant highlights.

Nose
Remarkably expressive and exuberant, the bouquet reveals great freshness. It exudes complex aromas of black and wild fruits such as blackberry and raspberry, harmoniously blended with scents of garrigue, undergrowth and black olive. Touches of spice, cocoa and coffee complete this rich aromatic palette.

Palate
The attack is delightfully fresh, opening onto a generous, fleshy and velvety texture. With strong aromatic intensity, the palate is dominated by black fruits along with subtle notes of cocoa and toast. The whole is perfectly balanced and structured by exceptionally fine tannins, leading to a captivating finish of remarkable length.

Food and wine pairings
This refined cuvée pairs wonderfully with flavourful red meats, such as roast rack of lamb with its jus, or with game dishes such as wild boar stew, venison or wild duck. As for cheeses, it will enhance both cooked and uncooked pressed cheeses, such as Beaufort, Ossau-Iraty, Cantal or Saint-Nectaire.

Serving and cellaring
To fully appreciate the complexity of the Les Cistes 2016 cuvée, we strongly recommend decanting it for a long time, at least one hour before tasting, and serving it at an ideal temperature of between 16 and 18°C. With a structure built to stand the test of time, this red has exceptional ageing potential and can be cellared for more than fifteen years, until 2031 at the very least.

Peyre Rose Crafts a Rich and Balanced Vin de France

The estate
Founded in the early 1990s by Marlène Soria, who remains its owner and manager today, Peyre Rose is a true benchmark in winemaking. Set on the heights of Saint-Pargoire, this vineyard of approximately 25 hectares is managed with rare rigour and the utmost respect for living ecosystems. The winemaker produces cuvées with exceptional ageing potential and a unique personality, which have greatly contributed to raising the region's status among the finest wine terroirs.

The vineyard
The vines that produce this Vin de France are planted on the highest part of the estate, in the heart of a preserved environment of wild garrigue and pine groves. The vines grow in extremely stony, poor and hard soils, which encourage deep rooting. The entire vineyard is rigorously farmed according to the principles of organic and biodynamic agriculture. The work is essentially manual, with strict control of yields to ensure optimal concentration in the berries.

Winemaking and ageing
The creation of the Les Cistes 2016 cuvée relies on gentle, patient methods. After the harvest, the grapes are partially destemmed before undergoing a long maceration, accompanied by gentle pumping over to extract structure with finesse. The ageing is exceptionally prolonged: the wine rests for nearly ten years, mostly in tank and one quarter in large wooden foudres. Finally, additional bottle ageing perfects its refinement before release.

Grape varieties
This blend is largely dominated by Syrah, which makes up 90% of the composition. It is judiciously complemented by 10% Grenache Noir and Mourvèdre.
