Le Figaro Vin

A gently captivating nose, like the sweet scent that lures Hansel and Gretel into the forest. Wild berries, forest floor, licorice, and juniper compose a bouquet that is both wild and refined. Tasting notes

Colour
This wine reveals a beautifully clear garnet red colour, adorned with subtle violet nuances that reflect its youth.

Nose
The aromatic bouquet opens with vibrant notes of ripe red fruits, such as cherry and raspberry, enhanced by floral touches of violet and a hint of white pepper. With aeration, delicate musky nuances reveal themselves with elegance.

Palate
The attack offers a superb balance between concentrated red fruit and lovely freshness. The mid-palate unfolds flavours of cherry and redcurrant, underpinned by a mineral backbone. The tannins are silky and crisp, leading to a long, persistent finish with mineral and subtly smoky accents.

Food and wine pairing

Ideal with duck breast with raspberries, this wine also pairs wonderfully with herb-roasted poultry or aged pressed-curd cheeses such as Comté or Gruyère.

Service and storage

To fully appreciate this Marsannay Village "Clémengeots" 2023, it is recommended to serve it at a temperature of 16 to 17°C, taking care to decant it for about thirty minutes while it is still young. This wine can be enjoyed now and will continue to evolve favourably until around 2037.

The elegance and purity of a great Burgundy wine

The estate

Founded in 1999 with just one hectare of leased vines, Domaine Sylvain Pataille is located in Marsannay-la-Côte, in the north of the Burgundy wine region. Now overseeing a vineyard of around 17.5 hectares, Sylvain Pataille has managed to establish his estate among the leading names in the region. A committed advocate of environmentally friendly viticulture, the winemaker favours biodynamic methods and a minimal-intervention approach in the cellar. The estate is particularly renowned for its ability to authentically express the full complexity of the local terroirs.

The vineyard

The Clémengeots plot is located on the northern border of Couchey, within the Marsannay appellation. Spanning one hectare, this terroir benefits from a gentle east-facing slope, allowing for optimal morning sun exposure. The vines thrive on shallow soils composed of white limestone, red clay, and small pebbles that provide excellent drainage. The vineyard is carefully tended, including ploughing with horses to preserve soil structure and promote biodiversity.

The vintage

The year 2023 stood out for its particularly mild weather conditions. After a gentle start to the year and a classic spring that favoured a beautiful flowering in late May, June proved to be dry. While July was relatively cool, a heatwave in early August helped accelerate berry ripening. Harvesting began early in September, yielding grapes in impeccable health and at optimal physiological ripeness.

Winemaking and aging

The grapes are harvested by hand. Upon arrival at the winery, half of the bunches are kept whole while the other half is gently destemmed. Fermentation begins naturally through indigenous yeasts, with very gentle extractions. After a careful vertical pressing lasting several hours, the wine is transferred into barrels for ageing of around 18 months in oak barrels, 15% of which are new. The wine is finally bottled without fining or filtration.
