Tasting notes
Colour
With a brilliant yellow hue and green highlights, this wine will develop subtle golden nuances over the years of cellaring.
Nose
The aromatic bouquet opens with citrus notes, dominated by lemon, and delicate white flowers such as acacia. It then reveals a complex mineral identity, marked by iodine touches, fern and gunflint.
Palate
From the very first sip, the wine shows vibrancy and great freshness. The palate offers a refined and fleshy texture, typical of this sun-drenched vintage, while maintaining remarkable balance. The finish, of beautiful length, extends the pleasure with a persistent minerality and subtle fruity aromas.
Food and wine pairing
This white wine pairs wonderfully with oysters, shellfish such as scallops or langoustines, and fish in a light sauce. It will also enhance white meats in cream sauce, asparagus-based dishes, or a mature goat cheese.
Service and storage
To fully appreciate this Chablis 1er Cru 2022, it is recommended to serve it at a temperature between 12 and 13°C. This wine can be enjoyed now to appreciate its vivacity, but it also has the potential to age in the cellar until around 2032.
The estate
Founded in 1880 in Beaune, Maison Joseph Drouhin expanded into the Chablis vineyards starting in 1968 under the leadership of Robert Drouhin. Named Drouhin Vaudon in tribute to the family's origins, this entity is now led by Frédéric Drouhin, alongside Philippe, Véronique and Laurent. Located in Burgundy, the estate stands out for its full commitment to biodynamic viticulture. With its 38 hectares in Chablis, the estate strives to express the authenticity of its terroirs through strictly controlled yields.
The vineyard
The plots dedicated to this Chablis wine are mainly located in the Vauvillien valley, on steep slopes. The terroir rests on Kimmeridgian limestone soils, rich in small marine fossils, which give the wine its distinctive mineral identity. The vineyard is farmed biodynamically, with a strict commitment to limiting yields to approximately 20% below the limits authorized by the appellation in order to guarantee optimal quality.
The vintage
The year 2022 was marked by particularly hot and dry weather conditions. After a few episodes of moderate frost in early April that caused only minor damage, the vines developed rapidly thanks to a historically warm May. Flowering took place in late May, followed by rain at the end of June which accelerated vegetative growth. Despite a scorching summer and a marked water deficit in August, the harvest began on August 31st under favorable conditions.
Winemaking and aging
The grapes are harvested and then very gently whole-bunch pressed using a pneumatic press. After light settling, the fermentation of this Chablis 1er Cru 2022 takes place in temperature-controlled stainless steel tanks. Aging spans a period of seven to ten months, in stainless steel tanks as well as in large wooden vessels, with the estate deliberately avoiding the use of new barrels in order to preserve the wine's freshness and mineral purity.
