Tasting
Colour
Deep black with violet highlights.
Nose
The nose reveals a great concentration of powerful black fruit, dominated by notes of blackcurrant and blackberry.
Palate
Aromas of coffee, exotic wood, wild herbs and mint enrich the palate. The wine is rich, with thick, silky tannins wrapped in candied fruit and dark chocolate.
Serving
For optimal enjoyment, serve between 16 and 18°C, after decanting.
Food and wine pairing
Vintage Port pairs beautifully with walnuts, blue cheeses and dried fruit, or can simply be enjoyed on its own.
A complex Vintage Port with an intense aromatic structure
The estate
Founded in Portugal in 1815, Fonseca has established itself as a leading Vintage Port house. Since its foundation, five generations of the Guimaraens family have nurtured the house with their expertise. Its classic Vintage Ports are regarded as remarkably consistent in style. This consistency stems not only from the family's enduring commitment and the knowledge and skills handed down from one generation to the next, but also from a close bond with the vineyard. In 2006, Fonseca became the first house to offer a Port made entirely from organically grown grapes, and it is also the only Port house to have had four wines rated 100 points.
The vineyard
This Fonseca Vintage Port 2007 is produced from three quintas (Quinta de Santo António, do Cruzeiro and do Panascal) located in the Cima Corgo, the emblematic wine-growing area of the Duriense region.
Winemaking and ageing
The grapes used to make this Vintage Port are foot-trodden in the stone "lagares" at Cruzeiro and Panascal, before fermentation and ageing.
The vintage
Following a rainy winter that replenished water reserves, spring and summer 2007 were marked by cool temperatures and regular rainfall, with no intense summer heat. These conditions encouraged optimal ripening of the grapes while preserving excellent natural acidity. In September, high temperatures allowed ripeness to be fine-tuned, making it possible to harvest balanced, elegant, rich and fruity grapes.
