Tasting

Appearance
The wine displays a lovely pale yellow hue, enhanced by delicate green highlights.

Nose
The aromatic bouquet opens with notes of yellow fruit, such as mirabelle plum, and citrus, intertwined with scents of white flowers. A mineral dimension reminiscent of wet stone blends harmoniously with subtle hints of pastry and a fine touch of white asparagus.

Palate
At once crystalline and dense, the palate offers superb balance, carried by lively acidity and a pleasantly enveloping texture. Mouthwatering and full of energy, it stretches out into a long, saline finish, elegantly underscored by delicate bitter notes.

Food and wine pairings

This white wine pairs beautifully with seafood such as oysters, shellfish, white fish sashimi or a fillet of sole. It is also an excellent match for grilled fish, hard cheeses such as Comté, light plant-based dishes, and desserts with little sugar made with pear or vanilla.

Serving and cellaring

This 2022 Chablis can be enjoyed now for its freshness, but it will continue to develop in the cellar until around 2029.

The purity and minerality of a Chablis wine

The estate

The winemaking story of Jean-Marc Brocard began in 1973 with the planting of his first vines, leading to the official founding of the estate in 1974. Located in Préhy, in the heart of Burgundy, this family property has grown considerably and now covers around 240 hectares. Currently run by Julien Brocard, managing director, and his sister Céline, the estate stands out for its pioneering and deep-rooted commitment to the environment. With a significant share of its vineyards certified organic and biodynamic, the house has established itself as a key player in the Chablis region, one that shows great respect for its terroir.

The vineyard

The grapes that give rise to this Chablis come from plots in the Chablis area, set on typical Kimmeridgian soils. This distinctive terroir, made up of marl and limestone rich in marine fossils, gives the wine its characteristic tension and minerality. Great care is taken in managing the vines, which are farmed according to the principles of organic agriculture, encouraging deep rooting and preserving the life of the soil.

The vintage

The 2022 vintage benefited from a continental climate with cool temperatures, allowing for slow ripening. This vintage is characterised by a profile that combines the generosity and aromatic richness of a ripe year with lovely acidic tension, preserved thanks to a harvest carried out with great precision.

Vinification and ageing

The estate's philosophy favours minimal intervention for this 2022 Chablis. After hand harvesting, the berries are brought in by gravity. Alcoholic and malolactic fermentations take place exclusively in stainless steel tanks, often with indigenous yeasts, entirely avoiding the use of oak so as not to alter the character of the wine. The wine is then aged on fine lees for around ten months, building texture while preserving the freshness and vibrancy of the fruit.
