Decanter

This charming village-level Chablis is a faithful (and delicious) reflection of the 2023 growing season in Chablis, featuring ripe aromas of white peach and nectarine, a hint of hawthorn flowers, and a suggestion of spice. The wine is a true cuvée ronde, reflecting the entire appellation, since Benoît Droin blended it from 40 parcels that total 9.33ha. The grapes are fermented on native yeasts and aged in stainless tanks to preserve the purity of the fruit. This wine will drink well on release.

The estate

Established in Burgundy, Domaine Jean-Paul & Benoît Droin draws on an exceptional family heritage whose winegrowing origins date back to 1547. Backed by nearly five centuries of history, this 26-hectare estate, spread across some of the most prestigious terroirs of Chablis, is now run by Benoît Droin. Representing the thirteenth generation, he succeeded his father Jean-Paul in 2014. Combining ancestral know-how with a contemporary approach, the estate is distinguished by sustainable viticulture and a constant commitment to enhancing the pure, mineral expression of its terroirs through wines of great precision.

The vineyard

The grapes used for this Chablis come from around thirty distinct plots spread across the communes of Courgis and Fleys. The vines, averaging 35 to 45 years of age, thrive on shallow Kimmeridgian soils composed of grey marls and limestone rich in marine fossils. The estate favours sustainable farming practices, incorporating regular ploughing and maintaining plant cover to stimulate microbial life in the soils. Rigorous pruning is also carried out to control yields and ensure optimal vine health in the face of the region's cool climate.

The vintage

This year's growing cycle required particular attention to adapt to the northern climatic conditions. Harvesting began early, as soon as the grapes reached optimal physiological ripeness. This strategic decision helped preserve the natural vibrancy of the grapes before the ripening process could diminish their aromatic freshness.

Winemaking and aging

The creation of the Chablis "Village" 2023 begins with mechanical and manual harvesting, followed by careful gravity-fed transport to preserve the integrity of the grapes. Pneumatic pressing allows for gentle juice extraction. Fermentation takes place mainly in temperature-controlled stainless steel vats, ensuring protection against oxidation. Under the guidance of Benoît Droin, aging follows a minimalist approach to the use of wood, favouring the purity of the fruit and the authentic expression of the terroir.
