The Drouhin 2007 Beaune Clos des Mouches suggests strawberry rhubarb in its sweet-tart alternation, which I find alluring although I would have expected it in a 2008 rather than a 2007. Nutmeg, smoked meats, damp bark, and peat lend interest, and while this is rather opaque when compared with the 2008 rendition, it boasts satisfying persistence of sweet fruit. Perhaps its personality will focus more with time in bottle, but I am betting against that and would plan on following it for 6-8 years. “2008 was very slow in doing its malolactic – which was good, and ended up with a pretty lively impression of acidity” remarked Veronique Boss-Drouhin, “and I think the wines will be slow to evolve in bottle, as well.” Numerous cuvees were still in tank or barrel when I visited in March, which constitutes an unusually late schedule at this address. The 2007s, by contrast, were bottled even earlier than normal, most at age 12 months. In 2008, a 15-25% share of stems and whole clusters was included in the fermenting vat for the Clos des Mouches and for most of the Drouhin grand crus, whereas in 2007 that degree of vendange entier was practically the rule across the entire Drouhin range (by no means all of which I tasted). With a ripe texture, this is developing into a delicious wine. It has richness, allied to the lighter structure of 2007, the acidity and red fruits driving right through the beautifully perfumed wine.

Tasting

Colour
This wine displays a deep, bright ruby red colour. As it ages, this hue gradually evolves towards garnet and brick tones.

Nose
The bouquet expresses itself with beautiful freshness and great intensity, first revealing aromas of red fruits such as blackberry, raspberry and morello cherry. Subtle mineral touches accompany this fruitiness, before giving way, with age, to more complex notes of dark tobacco, liquorice, undergrowth and light smoky scents.

Palate
From the very first sip, the palate reveals itself as forthright, offering a texture that is both fleshy and fluid. The structure rests on silky, well-integrated tannins, giving the wine a lovely firmness without any harshness. The natural acidity preserves a very pleasant freshness, leading to a delicate and harmonious finish.

Food and wine pairing

This red wine pairs beautifully with feathered game, such as roast duck or goose. It also enhances farmhouse poultry accompanied by a wild mushroom sauce, or fine charcuterie such as rillettes and terrines.

Service and storage

To fully reveal its aromatic range, it is recommended to serve this "Clos des Mouches" 2007 at a temperature of 16°C, taking care to let it breathe for about fifteen minutes beforehand. This wine boasts excellent aging potential and will continue to evolve favourably until around 2027.

The elegance and complexity of a Beaune Premier Cru red wine

The estate

Founded in 1880, the House of Joseph Drouhin is an emblematic figure of Burgundy. Based in Beaune, it oversees a vineyard of around a hundred hectares spread across the entire region. A pioneer in environmental matters, the estate adopted organic and biodynamic farming methods early on. Today, the property is run by the fourth generation, represented by Frédéric Drouhin, the current president, alongside Véronique, Philippe and Laurent. Together, they carry on the family's expertise, crafting wines renowned for their great finesse.

The vineyard

The grapes come from a historic fourteen-hectare plot within the Beaune Premier Cru appellation. Lying midway up a gentle south-east-facing slope, the vines flourish on a distinctive terroir. The upper part is characterised by very stony soils ensuring ideal drainage, while the centre of the plot is more composed of marl and limestone. The vineyard is cultivated with a high planting density, and the soils are worked with horses to preserve the ecosystem.

The vintage

The year began under ideal conditions, with a particularly beautiful April ensuring an excellent start to the growing cycle. Although the summer season was marked by humidity and overcast skies, the return of cool, sunny weather in September proved to be a saving grace. This mild end to the season allowed for the harvest of healthy grapes, offering lovely concentration and remarkable balance.

Winemaking and aging

The making of this "Clos des Mouches" 2007 begins with hand-harvesting into small crates. In the cellar, the proportion of whole clusters varies from 20 to 50% depending on the characteristics of the fruit. Fermentation takes place using indigenous yeasts in small open vats over two to three weeks, with punching down and pumping over carried out by hand. The wine is then aged for fourteen to eighteen months in French oak barrels, a quarter of which are new.
