The Estate
Officially founded in 1797, the Maison Louis Latour is a true institution in Burgundy. Located in the heart of the Côte de Beaune, this independent family estate oversees a remarkable vineyard of around 50 hectares, including a unique collection of classified plots. Representing the twelfth generation, Florent Latour now leads the estate. Alongside Eléonore Latour, he carries on a time-honored expertise. The house is distinguished by its commitment to sustainability and its desire to offer wines that faithfully reflect their terroirs, while remaining accessible to wine lovers.
The Vineyard
This wine comes from the "Les Chenevottes" plot, a terroir classified as Premier Cru within the Chassagne-Montrachet appellation. Located at a slightly higher altitude than the other plots in the commune, the vines, around 35 years old, thrive on soils composed of clay and limestone. The estate follows the principles of sustainable farming, certified ISO 14001, favoring organic techniques to preserve the soil ecosystem. This environmentally respectful approach fits perfectly within the winemaking tradition of Burgundy. To ensure optimal concentration of aromas, yields are limited to 40 hectoliters per hectare and the harvest is carried out by hand.
Winemaking and Aging
The making of the Chassagne-Montrachet 1er Cru "Les Chenevottes" 2024 is the subject of meticulous attention. The main alcoholic fermentation takes place traditionally in oak barrels. It is followed by a complete malolactic fermentation, which helps soften the wine's texture. The wine is then aged for 8 to 10 months in medium-toast French oak barrels, crafted by the estate's own cooperage. Half of these barrels are new, offering a subtle balance between woody aromas and the natural expression of the fruit.
