Tasting

Colour
The colour reveals a pale hue tinged with gold, of great limpidity and beautiful transparency.

Nose
Complex and full of nuance, the nose exudes aromas of orange peel and lemon pulp, subtly enhanced by touches of aniseed and a delicate note of powdered ginger.

Palate
Precise and well-structured, the palate proves fruity and approachable. Carried by beautiful tension and a refreshing natural acidity, it stretches out into a long, persistent finish.

Food and Wine Pairing

This white wine pairs wonderfully with delicate seafood such as oysters or shrimp, as well as with roasted white fish. It also enhances poultry dishes, such as chicken poached in lemon butter, wild mushroom risottos, or creamy cheeses like brie and ricotta.

Other Characteristics

This wine has a moderate alcohol content, ranging between 11 and 11.5%, achieved without chaptalization in order to preserve the purity of the fruit. Before malolactic fermentation, the pH sits between 3.15 and 3.20, reflecting a beautiful natural acidity. The wine is made without any fining or filtration, using exclusively indigenous yeasts.

The Estate

Founded in 1970 by Marc and Michèle Colin, Domaine Marc Colin et Fils has established itself as an essential reference in Burgundy. Initially spanning six hectares, the estate now covers around 12 hectares of vines, mainly around Saint-Aubin. Currently run by Damien and Caroline Colin, the family estate carries on an expertise focused on respect for the terroir and sustainable viticulture. The wines produced reflect a minimal-intervention philosophy, constantly seeking finesse and the authentic expression of each plot.

The Vineyard

The terroir of the Chassagne-Montrachet appellation enjoys a privileged setting. The "Les Champs Gain" plot, located on a mid-slope, offers a warm, sheltered environment. The estate cultivates 0.45 hectares there, facing south-east, where vines aged between 25 and 55 years thrive. The soils, shallow and rich in limestone, consist of clay-limestone marls tinged with red and dotted with small stones. The vineyard is managed sustainably, with Guyot pruning and meticulous soil work.

The Vintage

2024 proved to be a particularly challenging year. A cold, wet spring disrupted flowering, causing coulure and millerandage, while summer rains encouraged mildew pressure. Fortunately, weather conditions improved from late July onward, followed by a sunny August that allowed the berries to ripen. After some rainfall in early September, the return of fine weather provided satisfactory harvesting conditions starting on September 19th. Despite low yields, the harvested grapes display a profile of great purity.

Winemaking and Aging

For the Chassagne-Montrachet 1er Cru "Les Champs Gain" 2024 cuvée, the harvest is carried out entirely by hand. After a thorough sorting, the grapes undergo gentle pneumatic pressing. Fermentation takes place using indigenous yeasts, without any lees stirring. The wine is then aged in oak barrels (with 15 to 20% new oak) for 11 to 12 months, before resting for a further six months in stainless steel tanks. To preserve its full texture, the wine is bottled without fining or filtration.
