Tasting

Colour
Revealing a delicate pale coral hue with salmon tints, this sparkling wine stands out for the finesse of its bubbles.

Nose
Wonderfully fresh, the aromatic bouquet releases crisp notes of white fruit and fresh grapes, harmoniously underscored by hints of red fruit.

Palate
The tasting unfolds in three stages: a generous attack marked by vine peach gives way to the zesty vivacity of red fruit. The exceptionally elegant finish reveals a subtle salinity carried by a wonderfully delicate effervescence.

Food and wine pairing

Ideal as an aperitif, this wine pairs beautifully with raw fish dishes such as ceviche or tartare, as well as with grilled fish seasoned with Mediterranean herbs. It also enhances light shellfish, Provençal vegetable preparations, dishes with saline notes, and white meats delicately flavoured with citrus.

The sparkling elegance of a historic Provence estate

The estate

Founded in 1204 when it was donated to the Knights Templar, the Commanderie de Peyrassol is a historic estate located in Provence, France. Now run by Philippe Austruy, who acquired the estate in 2001, this vast 850-hectare property stands out for its multidisciplinary approach. Indeed, Peyrassol combines certified organic winegrowing excellence with a strong cultural commitment, housing one of Europe's largest open-air contemporary art collections, as well as a Michelin-starred dining offering.

The vineyard

Nestled on the foothills of the Maures massif at altitudes between 220 and 350 metres, the vineyard benefits from a Mediterranean climate sheltered from maritime humidity. The vines, spread across 53 distinct plots, are cultivated according to strict organic farming principles, with no chemical inputs, and cereal cover crops sown between the rows to preserve soil life. Although born of this exceptional Provençal terroir, this wine is classified under the Vin de France appellation.

Winemaking and aging

The Fines Bulles Rosé 2024 is crafted using the Charmat method. The second fermentation, responsible for creating the wine's fizz, takes place in large stainless steel tanks to preserve the full purity and delicacy of the fruit. The wine then undergoes aging on the lees in bottle, allowing the bubbles to integrate perfectly and develop a wonderfully fine effervescence.
