Tasting

This white wine pairs beautifully with fine fish such as fillet of sole, roasted turbot or grilled line-caught sea bass. It also enhances shellfish such as seared scallops or lobster, as well as white meats, particularly poultry in a lightly creamy sauce. Finally, it pairs perfectly with cooked-pressed cheeses such as an aged Comté or a Beaufort.

The Purity and Tension of a Puligny-Montrachet Wine

The Estate
Founded in 2016 in Meursault, Domaine Pierre Girardin is run by Pierre-Vincent Girardin, representing the thirteenth generation of an illustrious winemaking family. This young prodigy vinified his first vintage at just 19 years old. The estate spans 6.5 hectares in Burgundy, covering prestigious appellations, as well as 6.2 hectares in the Jura. Combining a deep family heritage with a modern, minimally interventionist vision, Pierre Girardin has quickly established himself as a rising star, producing highly precise micro-cuvées that fully express the quintessence of their terroirs.

The Vineyard
Originating from a rare section classified at village level within the renowned "Les Folatières" climat, this Puligny-Montrachet parcel is uniquely surrounded by Premier Cru vines. The vineyard is planted with old vines over 40 years old, cultivated according to organic farming principles. This environmentally friendly approach, free of synthetic products, yields grapes of remarkable concentration.

Winemaking and Aging
The winemaking of the Puligny-Montrachet Village "Les Folatières" 2023 is carried out in an artisanal manner, using exclusively indigenous yeasts. The aging process takes place in two distinct phases: the wine first rests for 12 months in large 456-litre barrels, 50% of which are new oak, allowing for gentle integration without marking the wine. It is then transferred to stainless steel tanks for a period of 8 months to stabilise and refine the cuvée while preserving its natural tension.
