The estate
Founded in 1840, the House of Simonnet-Febvre is among the oldest wine houses in Chablis. Owned by Maison Louis Latour since 2003, it has been led by Paul Espitalié since 2019. The estate stands out for its unique dual expertise: producing still wines from Chablis and crafting Crémants de Bourgogne using the traditional method, thus perpetuating historic know-how dating back to its origins. Simonnet-Febvre embodies the alliance between centuries-old tradition and a contemporary vision of Burgundy wine.
The vineyard
The Chablis 1er Cru "Montée de Tonnerre" comes from one of the most prestigious climats in the appellation, located on the right bank of the Serein, in the immediate vicinity of the Grands Crus. This exceptional terroir rests on Kimmeridgian soils, made up of limestone rich in marine fossils dating back to the Jurassic period. This unique geological composition gives this Burgundy wine its distinctive mineral signature and crystalline freshness.
Winemaking and aging
Winemaking for the Chablis 1er Cru "Montée de Tonnerre" 2021 takes place in temperature-controlled stainless-steel tanks. Aging also occurs in stainless-steel tanks, preserving the fruit’s aromatic purity and the terroir’s mineral expression in full, without the influence of oak that could mask the natural characteristics of this exceptional climat.
