Nose
The nose of Time: Space Sherry Cask opens with sherry-soaked fruits, lifted by dark chocolate truffles. Warm notes of cinnamon and ginger round off this first impression, heralding the spicy richness of the whisky.
Palate
On the palate, the whisky reveals a generous core of dried fruits, with sultanas, dates and apricots mingling with ginger cake and treacle toffee. Notes of jam, clove and cinnamon add depth, while cocoa and refined oak lend structure. The long, warming finish lingers on gentle woody spices, a hint of espresso and delicate oak notes.

The Macallan, a legendary Speyside distillery
The Macallan is an iconic Scotch whisky distillery, founded in 1824 on the Easter Elchies Estate in Craigellachie, in the heart of Speyside. One of the first distilleries to be granted a legal licence in Scotland, it built its reputation on an exceptional mastery of wood and time. Up to 80% of the flavour of its whiskies and all of their natural colour come from the oak casks used for maturation, particularly those seasoned with sherry in Andalusia. Today, The Macallan belongs to the Edrington group, majority-owned by The Robertson Trust, a Scottish philanthropic foundation. This distinctive identity, combined with the use of small copper stills and deep integration into the sherry supply chain, notably through the acquisition of the Valdespino bodega, makes The Macallan an essential reference among prestige single malts.

Time: Space Sherry Cask is the third chapter of the Time: Space collection, created by The Macallan to celebrate the distillery's bicentenary, following the Time: Space and Time: Space Mastery editions. This 20-year-old single malt is the first release directly influenced by sherry produced at the Valdespino bodega in Jerez de la Frontera since its acquisition by The Macallan. Its maturation is based on a twofold interaction with ex-sherry casks. The whisky is first matured in a selection of ex-sherry oak casks, predominantly European with a touch of American oak, before being married in the very first sherry casks created specifically for the brand's bicentenary, seasoned with sherry made from Palomino grapes grown in Jerez. This approach marks an evolution from simple ageing towards a true marriage of ex-sherry casks, strengthening the historic bond between The Macallan and Jerez de la Frontera, the birthplace of sherry in Spain. The bottle takes the form of the iconic circular decanter of the Time: Space collection, whose shape evokes the continuous flow of time and draws inspiration from the Palomino grape. The accompanying presentation box pays tribute to the art of sherry-making.
