The estate

The William Fèvre estate, founded in 1959, is today the largest owner of Chablis Grands Crus, with around 70 hectares of vines spread across 90 parcels. Since January 2024, the estate has belonged to Domaines Barons de Rothschild, who continue the environmental commitment and terroir-respectful winemaking philosophy initiated by Didier Séguier, director since 1998. The estate stands out for its biodynamic approach and its Haute Valeur Environnementale certification, making it a pioneer in sustainable viticulture in the Bourgogne region.

The vineyard

The Chablis Grand Cru "Bougros" vineyard enjoys an exceptional setting, with a south/southwest exposure at the foot of the hillside. The vines take root in the famous Kimmeridgian soil, a clay-limestone earth rich in marine fossils that gives Chablis wines their distinctive minerality. This unique geology, combined with the site's favorable exposure, enables optimal ripening of the grapes while preserving the freshness essential to expressing the Burgundy terroir.

The vintage

The 2019 vintage in Chablis was marked by contrasting weather conditions. Low rainfall and high temperatures defined the season, resulting in naturally low yields. These conditions nevertheless produced grapes with fine ripeness, while maintaining the essential acidity that defines the identity of Chablis wines. The 2019 vintage is recognized for producing balanced wines with great aromatic purity and remarkable freshness.

Winemaking and aging

The winemaking of the Chablis Grand Cru "Bougros" 2019 follows the principle of gravity to preserve the integrity of the grapes. A short pneumatic pressing is followed by light settling. Aging takes place over 14 to 15 months, with 50 to 60% of the wine aged in French oak barrels averaging 6 years of age, the rest kept in small stainless-steel tanks. This method develops the wine’s complexity while preserving its mineral character and aromatic purity, the estate’s signature.
