Tasting
Colour
A dense, brilliant garnet-red hue heralds the richness of the 2023 vintage.
Nose
The nose is intense and generous, combining ripe red and black fruits such as cherry, raspberry, blackberry and strawberry with a delicate spicy touch. Notes of tea and cocoa enrich the bouquet, while a discreet hint of oak subtly completes the whole.
Palate
The palate reveals a beautiful body, supported by tannins that are both firm and fine, bringing structure and elegance. The long, flavourful finish extends the fruity sensations perceived on the nose.
Food and Wine Pairing
This wine will pair ideally with roasted or slow-cooked meats such as beef, duck, pork or game. It also goes very well with ripened cheeses of medium to advanced maturity.
Serving and Cellaring
The Aloxe-Corton 1er Cru "Les Fournières" Dom. du Pavillon 2023 is best enjoyed at a temperature between 15 and 17°C. It can be kept and appreciated until around 2028-2030.

The Estate
Founded in 1831 by Bernard Bichot, Albert Bichot is today one of the last great Beaune houses that remains family-owned and independent, led since 1996 by Albéric Bichot, the sixth generation of the family. Spread across six estates covering approximately 106 hectares in Burgundy, the house relies on Domaine du Pavillon, located in Pommard, for the production and ageing of its Côte de Beaune reds, including the Aloxe-Corton 1er Cru "Les Fournières".
The Vineyard
The "Les Fournières" Climat, classified as a 1er Cru of Aloxe-Corton, extends over a 0.4-hectare plot farmed by Domaine du Pavillon. The vines, around 40 years old, are planted at the foot of the Corton hill, on a gentle slope facing east-southeast. The deep soil is made up of brown limestone resting on stony scree, giving the wine both volume and finesse.
Vinification and Ageing
The grapes for the Aloxe-Corton 1er Cru "Les Fournières" Dom. du Pavillon 2023 are hand-harvested, then vinified in temperature-controlled conical wooden vats for a maceration of approximately 15 to 25 days. Ageing takes place entirely in oak barrels, with a proportion of new oak between 10 and 25%, for approximately 12 to 15 months.
