Tasting
Colour
This wine reveals a red hue, typical of Pinot Noir produced on this climat of the Côte de Beaune.
Nose
The nose is rich and generous, driven by notes of cherry and ripe dark fruit, subtly lifted by touches of fine wood and gentle spice. With aeration, it gains in complexity, revealing floral nuances of violet along with a discreet hint of exotic tea.
Palate
The palate is succulent and vibrant, supported by a caressing, perfectly integrated tannic structure. The ripe fruit expresses itself generously, while the subtle, well-melded woody notes add a spicy touch to the whole, leading to a finish that is both rich and elegant.
Food and Wine Pairing
This wine will pair ideally with fine cuts of red meat or game, roasted or slow-cooked, as well as cheeses of medium character. It also works very well with roasted white meat enhanced by a sweet, aromatic touch, such as rack of lamb with honey and rosemary.
Serving and Cellaring

The Estate
Founded in 1831 by Bernard Bichot in Monthélie, the House of Albert Bichot settled permanently in Beaune, in Burgundy, in 1912. Now led by Albéric Bichot, it brings together six family-owned estates spread across the great Burgundy wine regions. Committed for several years to a process of organic conversion, the house is also renowned for its role as the leading buyer at the Hospices de Beaune auction.
The Vineyard
The Beaune 1er Cru "Les Bressandes" climat lies to the north of Beaune, on a gently sloping hill with a south-easterly exposure. Its clay-limestone soils with a relatively sandy texture promote good drainage and help reveal the elegance and finesse of Pinot Noir. The plot, farmed by Domaine du Pavillon, is managed according to organic farming principles.
Vinification and Ageing
The vinification of the Beaune 1er Cru "Les Bressandes" - Domaine du Pavillon 2022 is carried out in temperature-controlled, truncated conical wooden vats, allowing for a gentle and precise extraction. The wine is then aged in oak barrels for 12 to 18 months, with a measured proportion of new oak, in order to preserve the expression of the fruit while adding a discreet, well-integrated aromatic complexity.
