Food and Wine Pairing
This Puligny-Montrachet 1er cru "Folatières" 2024 will pair ideally with fine fish in sauce, shellfish or white meats served with cream and mushrooms, in the spirit of the great classic pairings associated with the racy white wines of the Côte de Beaune.
Serving and Cellaring
The Puligny-Montrachet 1er cru "Folatières" 2024 is best served chilled, at around 12 to 14°C, in a glass suited to great white Burgundies, so as to fully reveal its aromatic complexity.
A Puligny-Montrachet Premier Cru with Refined Minerality from Albert Bichot
The Estate
Founded in 1831 in Monthélie by Bernard Bichot before moving to Beaune in 1912, Maison Albert Bichot is today led by Albéric Bichot, representing the sixth generation of the family. Located in the heart of Burgundy, it relies on six estates covering more than one hundred hectares of vines farmed organically or sustainably, from the Chablis region to Beaujolais. The House is also renowned for its role as the leading buyer at the Hospices de Beaune Wine Auction for more than thirty years.
The Vineyard
The Les Folatières climat, the largest Premier Cru of Puligny-Montrachet, lies mid-slope on very stony clay-limestone soils rich in limestone scree. The plot enjoys a prime south-east exposure and sits in close proximity to the Grands Crus Chevalier-Montrachet and Montrachet, within the same geological corridor conducive to producing great age-worthy Chardonnays.
Vinification and Ageing
The grapes for the Puligny-Montrachet 1er cru "Folatières" 2024 are harvested by hand, then carefully sorted before being pressed slowly and gently to preserve the fruit. Alcoholic fermentation and ageing take place on fine lees, in oak barrels of which 20 to 30% are new, for a period of 14 to 16 months, in a quest for balance between aromatic complexity and respect for the terroir.
Grape Variety
100% Chardonnay
