Disgorged in June 2021, the latest release of Paillard's NV Extra-Brut Première Cuvée is showing very well out of the gates, and it's already expressive, bursting with aromas of ripe orchard fruit, freshly baked bread, brioche and citrus oil. Medium to full-bodied, fleshy and precise, with a pinpoint mousse, bright acids and chalky grip on the finish, it's approachable now but also built to evolve with grace.

The NV Extra Brut Première Cuvée is bright, aromatic and nicely lifted. Crushed rocks, mint, white pepper, slate and citrus fruit are all beautifully delineated. Brisk acids pull it all together on the close. This airy, nuanced Champagne from Bruno Paillard is a delight. The blend is 45% Pinot Noir, 33% Chardonnay and 22% Meunier, with 32% reserve wines that date back to 1985. Disgorged: September 2022.

A bright yellow/straw color, the NV Champagne Premiere Cuvée Extra Brut is made from a blend of 45% Pinot Noir, 33% Chardonnay, and the remainder Meunier, with 20% aged in barrels and roughly a third of the blend coming from their perpetual reserve going back to 1985. Classic and rounded on the nose, with aromas of brioche, peach, hazelnut, and fresh flowers, the palate is supple and balanced, with full-bodied richness, a weightless feel, a refined and elegant mousse, and lasting notes of citrus oils through the finish. One of my favorite entry level wines, this consistently over-delivers and is going to drink well over the coming 8-10 years. Disgorged in September 2022.

A straw-yellow hue that speaks of the poise of a noble ageing on lees and a carefully crafted blend incorporating outstanding reserve wines. White, red and exotic fruit comes across as charming, while sweet spices intertwined with zesty notes, flowers and damp limestone are spellbinding. On the palate, a chiseled stony edge; a shell-nut and clearly toasted, caramelized mantle perfectly protects this energy. A deliciously floral finish.

The estate

Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne houses. An uncompromising selection of terroirs, exclusive use of first press juices, blends crafted from an extensive collection of reserve wines, and aging periods twice as long as those required by the appellation specifications—each element of the Bruno Paillard range reflects this constant pursuit of excellence and the desire to create a “very personal style”.

The vineyard

The Bruno Paillard House oversees an exceptional vineyard, patiently built up and spanning 32 hectares of vines across 15 crus, 12 of which are classified as “Grands Crus”. The vineyard brings together the finest terroirs of Oger, Le Mesnil-sur-Oger, Cumières, Verzenay, as well as the exceptional Cru des Riceys located in the south of Champagne.

The wine

An emblematic cuvée of the Bruno Paillard House, the Première Cuvée Extra Brut is crafted regardless of the vintage profile, “in both generous and lean years”. Very lightly dosed (6g/l), this Brut stands out for its purity and authenticity. This cuvée is made exclusively from the purest first-press juices. The blend is composed from a palette of 32 crus, vinified separately in stainless steel tanks and oak barrels, with a minimum of 25% reserve wines, which can reach up to 48%.

Aging

Bottle aging on “lees” takes place for a minimum of 3 years, followed by a resting period in the cellar of 3 to 4 months after disgorgement. The disgorgement date is indicated on the back label.

Blend

Pinot noir (45%), chardonnay (33%), pinot meunier (22%).

Appearance
Upon tasting, Première Cuvée Extra Brut by Bruno Paillard reveals a bright straw-gold color, highlighting the vibrancy and finesse of its effervescence.

Nose
Complex, the aromatic bouquet showcases the typicity of each grape variety in the blend. Citrus and fruit notes appear first, echoing the chardonnay, before giving way to red fruit notes reminiscent of redcurrant, raspberry, and Morello cherry, indicating the strong presence of pinot noir. Finally, pinot meunier stands out with soft, exotic notes. Over time, this champagne will develop floral and spicy aromas along with toasty notes.

Palate
From the very first sip, the wine impresses with its liveliness and minerality, reflecting the chalky identity of its terroir. Flavorful and indulgent, the palate delights with citrus notes and hints of almond sweetness, followed by red and black fruit flavors. The finish is clean and lingers beautifully.

This Brut by Bruno Paillard can be enjoyed as an aperitif or paired with a meal thanks to its structured, wine-like character.

Serving temperature

To fully appreciate the purity of this Brut champagne, it is recommended to serve it at 9°C in a tulip-shaped stemmed glass to allow its aromas to fully express themselves.
