Description
Tasting characteristics and recommendations for the Dehours Lieu-Dit "Maisoncelle"
Tasting
Appearance
A pale yellow hue of beautiful intensity, enhanced by subtle golden reflections and enlivened by a delicate effervescence.
Nose
The bouquet is rich and complex. It expresses aromas of ripe yellow fruits reminiscent of orchard fruits, underscored by fine spicy notes and a highly distinctive ferrous mineral touch.
Palate
The silky texture is perfectly balanced by an invigorating tension, offering a dynamic palate. Orchard fruits emerge, carried by a chalky minerality that stretches towards a saline finish, long and remarkably fresh.
Food and wine pairings
This cuvée pairs wonderfully with seafood and shellfish, its mineral notes resonating particularly well with oysters. It also enhances delicately prepared fish, as well as white meats or poached poultry.
Serving and cellaring
It is recommended to enjoy the Lieu-Dit "Maisoncelle" in a large white wine glass, at a temperature above 10°C. Decanting is entirely possible to aerate the wine. As for cellaring, this cuvée can evolve favourably in the cellar for approximately 6 to 10 years.
The elegance of a great terroir-driven Champagne crafted by Dehours
The estate
Founded in 1930 by Ludovic Dehours, the brand established itself in Cerseuil, in the heart of the Vallée de la Marne. Today, it is Jérôme Dehours who manages this 14-hectare family estate, spread over 42 plots. Under his leadership since 1996, the domaine has embraced sustainable viticulture and the showcasing of single-plot cuvées. This Champagne producer stands out for its artisanal approach, prioritising the authentic expression of its terroirs and respect for the environment through certified practices.
The vineyard
The Maisoncelle plot is located in the commune of Mareuil-le-Port, mid-slope above the village of Port à Binson. This singular Champagne terroir extends lengthwise over more than 300 metres. North-east facing, the vines thrive on a clay-limestone soil particularly rich in iron, resting on millstone and limestone pebbles.
The blend
This cuvée is based on the principle of a perpetual reserve specific to the plot, initiated in 2013. Each year, this blend is renewed with 40% of the new wine, thereby ensuring beautiful stylistic continuity and great complexity.
Winemaking and aging
For the Lieu-Dit "Maisoncelle", fermentation takes place in oak barrels of various capacities (200, 300 and 500 litres). The wine then benefits from extended ageing on its lees in large casks. To preserve all its authenticity, clarification occurs naturally, without any filtration or fining.
Grape varieties
The blend is mostly composed of Pinot Noir (85%), complemented by Meunier (12%), Pinot Blanc (1.5%) and Petit Meslier (1.5%).
