Tasting
Appearance
This Blanc de Blancs reveals a bright, luminous robe, crossed by bubbles of extreme finesse that highlight the precision of the work accomplished.
Nose
The aromatic bouquet opens on a beautiful freshness of white flowers, quickly joined by notes of vibrant citrus and ripe orchard fruits. The whole is enhanced by a distinctive mineral touch reminiscent of flint.
Palate
The palate stands out for its remarkable mineral tension. The natural acidity of the Chardonnay expresses itself with elegance, offering a vibrant structure that perfectly reflects the identity of its limestone terroir.
Food and wine pairings
This cuvée pairs wonderfully with seafood. It will sublimate a beautiful seafood platter of oysters, shrimp, whelks and langoustines. Its minerality will also accompany to perfection delicate dishes such as crab, lobster, or a white fish tartare enhanced with citrus.
Serving and cellaring
Thanks to its beautiful tension and complexity, this cuvée has the stature to be enjoyed throughout an entire meal, from the aperitif to dessert.
A champagne combining finesse and balance
The estate
Located in Rouvres-les-Vignes in the Côte des Bar, the estate is run by Nathalie Falmet, one of the few women to be both a winegrower and an oenologist. She took over the family estate in 1993, the founding date of her winemaking adventure, although marketing under her own label only began in 2009. This roughly 3.30-hectare estate stands out for an approach combining scientific precision with artisanal methods. Certified HVE 3, it embodies a deep commitment to preserving the environment and to the authentic expression of this southern terroir.
The vineyard
The vines flourish in the Aube, on Kimmeridgian clay-limestone soils rich in marine fossils, typical of this southern part of Champagne. The wine comes from a single specific plot, identified under the number Z H 303. The estate practises sustainable and reasoned agriculture, certified Haute Valeur Environnementale (level 3), promoting the development of biodiversity and the preservation of water resources.
Winemaking and aging
The grapes are harvested 100% by hand, with each parcel entering the cellar separately. The great originality of this wine lies in its vinification carried out entirely in terracotta amphorae with a capacity of 8 hectolitres. This unique vessel encourages natural micro-oxygenation and creates a Brownian motion that brings great complexity to the wine. An extended aging of seven years and six months is then carried out before the release of this Blanc de Blancs.
