Description

Tasting notes and serving tips for the Beaune Premier Cru "Aux Cras" 2000 from Champy

Tasting

Color
The wine gleams with a deep garnet hue highlighted by delicate violet reflections.

Nose
The bouquet reveals an elegant floral range where violet and rose intertwine. These delicate scents are joined by lively fruit aromas reminiscent of blackcurrant bud and blueberry, bringing remarkable freshness to the nose.

Palate
The attack reveals a fine minerality that lends finesse and structure on the palate. The palate unfolds with breadth and balance, punctuated by subtle spicy notes. The saline, graceful finish extends the pleasure of tasting with refinement.

Food and wine pairings
This Beaune Premier Cru pairs superbly with duck breast with a blackcurrant sauce, a venison medallion with lingonberries, or a beef daube with grapes. It also accompanies, with distinction, stuffed quail with foie gras or a platter of aged cheeses.

A mineral and elegant Beaune Premier Cru

The estate
Founded in 1720 in Beaune by Edme Champy, the Maison Champy is the oldest Burgundy wine merchant house. Owned by the AdVini group since 2016, it is the last wine-production site located within the city walls of Beaune.

The vineyard
The Climat "Aux Cras" lies on the western slope of the Montagne de Beaune, at around 250 meters above sea level. The vines benefit from an east to south-east exposure on clay-limestone soils typical of the area.

Vinification and aging
The estate’s grapes undergo a cold soak prior to fermentation carried out with indigenous yeasts. Maceration lasts for 4 weeks. The Beaune Premier Cru "Aux Cras" is then aged in 6 Burgundy barrels, 25% of which are new.

Grape variety
This Burgundy wine is made from 100% Pinot Noir, farmed according to organic viticulture standards.
