Tasting
Colour
Revealing a ruby hue of medium to deep intensity, this wine displays violet glints that gradually evolve into garnet nuances over the years.
Nose
The aromatic bouquet opens with vibrant notes of red fruit, dominated by raspberry and cherry, enhanced by elegant floral touches of violet. Subtle herbaceous notes and a chalky minerality complete this profile, giving way to scents of undergrowth and leather with time.
Palate
With a smooth, refined texture, the palate reveals a medium body expressing flavours of redcurrant and cherry. There is a harmonious balance between vibrant acidity, silky tannins and a pronounced mineral structure that extends into a long, elegant finish marked by chalky accents.
Food and wine pairing
This red wine pairs beautifully with dishes rich in umami. It enhances duck-based preparations, such as confit or duck à l'orange, as well as feathered game. It also pairs perfectly with herb-crusted beef or veal, a rack of lamb, or mushroom-based dishes such as risotto. When it comes to cheese, it pairs ideally with Époisses, Comté or a well-aged Gruyère.
Service and storage
For optimal enjoyment of the Beaune 1er Cru "Champs Pimont" 2007, it is recommended to serve it at cellar temperature, between 13 and 15°C, after decanting for around thirty minutes. This wine has good ageing potential, allowing it to develop favourably in the bottle, and can be enjoyed until around 2022.

The estate
Founded in 1720 by Edmé Champy in the heart of Beaune, Maison Champy stands as the oldest documented wine merchant house in Burgundy. Pioneering and forward-thinking, it notably housed Louis Pasteur's research in the 19th century. Having weathered the passage of time and undergone several changes of ownership, the estate was acquired in 2024 by the AdVini group. Today, under the direction of Thierry Bellicaud and talented winemaker Dimitri Bazas, the estate continues its commitment to responsible, certified organic viticulture, producing wines that faithfully reflect the authenticity of their terroirs.
The vineyard
The vineyard from which this wine originates comes from a specific 0.63-hectare plot named Clos de la Chapelle, ideally located on the western slope of the commune of Beaune. East-facing, the vines, around forty-five years old, thrive on distinctive soils composed of iron-rich clay in the lower section and limestone on the higher ground. This geological diversity gives the grapes optimal ripeness and a unique mineral identity.
The vintage
2007 stood out for its particularly unusual weather conditions. After an exceptionally warm April that led to early flowering, the period from May to August was marked by coolness, humidity and heavy rainfall, favouring strong fungal disease pressure. Fortunately, a saving September, dry, sunny and swept by northerly winds, allowed the berries to dry out and reach excellent phenolic ripeness, giving rise to wines of great elegance.
Winemaking and ageing
The grapes for the Beaune 1er Cru "Champs Pimont" 2007 were harvested by hand in small crates, followed by rigorous sorting to retain only the healthiest berries. Fermentation took place in temperature-controlled open vats, followed by gentle vertical pressing. Malolactic fermentation, particularly slow that year, was completed in early 2008. The wine was then aged for nineteen to twenty months in French oak barrels, 26% of which were new. It was bottled without any fining or filtration in order to preserve its full complexity.
