Tasting

Appearance
The colour reveals a brilliant ruby hue.

Nose
The nose opens with luscious aromas of ripe, juicy fruit, blending red and black berries, subtly enhanced by delicate floral touches and hints of sweet spice.

Palate
On the palate, the wine is direct, well-balanced and full of vibrancy. Carried by lovely freshness and remarkably fine tannins, it unfolds into a lingering finish with elegant, faintly liquorice-tinged notes.

Food and Wine Pairing

This red wine pairs beautifully with guinea fowl with morels, chicken pâté en croûte, or white meats served with a creamy mushroom sauce. It also makes an ideal companion for aperitifs featuring fine charcuterie or tapas.

Serving and Cellaring

To fully appreciate this Bourgogne Hautes-Côtes de Nuits "Louis Auguste" 2023, it is recommended to serve it at a temperature of between 16 and 17°C. Ready to enjoy from 2025, it can be cellared and will continue to evolve favourably until around 2032.

The Elegance and Freshness of a Red Burgundy Wine by David Duband

The Estate

Founded in 1991, the Domaine David Duband has established itself as an essential reference in Burgundy. Born from the partnership between winemaker David Duband and investor François Feuillet, the current owners, the estate oversees a vineyard of around 17 to 25 hectares. Renowned for its organic approach and mastery of whole-cluster fermentation, the estate produces wines that combine purity and freshness, while passionately showcasing high-altitude terroirs.

The Vineyard

This Burgundy wine comes from old Pinot Noir vines around fifty years old, planted on south-facing slopes in the Hautes-Côtes de Nuits. Growing on limestone and marl soils, the vineyard benefits from an altitude that provides an ideal freshness. Committed to an environmentally friendly approach, the estate has been certified organic since 2006, favouring soil tillage and avoiding the use of chemical herbicides.

Winemaking and Ageing

The grapes for the Bourgogne Hautes-Côtes de Nuits "Louis Auguste" 2023 are hand-harvested and rigorously sorted. Vinification includes 40% whole clusters and takes place over a 17-day maceration period, punctuated by manual punching down and pumping over. The wine is then aged for 14 months in Burgundian barrels, 30% of which are new oak. To preserve the full texture of the wine, bottling is carried out without fining or filtration.
