Appearance

Nose
The nose reveals beautiful aromatic complexity, with notes of dried fruits, fresh walnut, and candied fruit. Subtle hints of undergrowth and a mineral edge characteristic of the limestone terroir complete this intense bouquet.
Palate
The attack is structured and straightforward. The palate unfolds aromas of fresh walnut, spice, and curry, alongside a mineral sensation reminiscent of wet stone. The wine develops with restraint and balance, driven by refreshing acidity and a fine mineral tension. The finish lingers for a long time.

This wine pairs perfectly with aged Comté, creamy mushroom dishes, or curry-based preparations. It also complements seafood, fish, and white meats. It can also be enjoyed as an aperitif.

The estate
The Domaine Guillaume Overnoy is located in Orbagna, in the south of the Jura. Guillaume Overnoy, great-nephew of the legendary Pierre Overnoy, took over the family estate in 2014 at the age of twenty. He converted the entire vineyard to organic farming, certified in 2016. The estate spans around 5.5 hectares across several communes. Guillaume favors a minimalist approach to winemaking, with limited intervention and the use of indigenous yeasts, respecting the expression of the terroir.
The vineyard
This wine comes from parcels located in the Côtes du Jura, on clay-limestone soils and red marls rich in clay. The vines benefit from south and southwest exposures, at altitudes between 250 and 320 meters. The vineyard is managed under certified organic farming, with practices that respect the environment and biodiversity.
The vintage
The 2020 vintage in the Jura was marked by sunny weather conditions, giving the grapes excellent ripeness and allowing for the production of concentrated, balanced wines.
Winemaking and aging
After fermentation with indigenous yeasts, Savagnin Typé 2020 was aged for around four years under a veil of yeast, following the traditional Jura method. This oxidative aging technique, in which the wine matures under a layer of yeasts without topping up, gives the wine its hallmark aromas of walnut, spice, and curry, as well as its intense golden color and aromatic complexity.
