Appearance
The wine displays an intense, luminous golden-yellow hue, characteristic of extended aging under a veil of yeast. It is bright and crystal-clear.
Nose
The nose reveals remarkable aromatic complexity. Walnut and hazelnut notes dominate, accompanied by aromas of dried fruits, notably apple and dried apricot. Spicy nuances of curry and saffron add a savory dimension, while subtle floral and herbal touches enrich the bouquet.
Palate
The attack is lively and powerful, driven by a crisp acidity that structures the whole. The palate unfolds with a creamy, full texture, offering a striking balance between richness and freshness. The finish lingers at length, revealing saline and mineral dimensions that persist with elegance. Despite its concentration, the wine retains a perfectly dry profile.

The estate
The Domaine Guillaume Overnoy is located in Orbagna, in the Jura. Founded in 1982 by Jean-Louis Overnoy, the estate now covers 5.5 hectares. Since 2013, Guillaume Overnoy, great-nephew of the legendary Pierre Overnoy, has run the estate. He converted the entire vineyard to organic farming, obtaining Ecocert certification. The estate stands out for its commitment to viticulture that respects the living world and to natural winemaking, favoring pure, vibrant wines that faithfully express their terroir.
The vineyard
This Côtes du Jura Vin Jaune comes from plots on marl soils, a terroir characteristic of the Orbagna area. The Savagnin vines, the sole grape variety used for Vin Jaune, benefit from favorable exposures and a continental climate conducive to slow, complete ripening. Vineyard management follows the principles of organic farming, prioritizing manual work and careful observation.
The vintage
The 2018 vintage proved exceptional in the Jura. Harvesting began as early as August 20, reflecting early ripeness. Perfect weather conditions throughout the picking period made it possible to obtain grapes with impeccable health and optimal maturity, laying the foundations for a Vin Jaune built for long aging.
Winemaking and aging
After fermenting the Savagnin, the Vin Jaune 2018 was aged under a veil of yeast for 6 years and 3 months, in accordance with the appellation regulations. Over this long period, the wine rests in barrels without topping up, allowing the natural development of a protective veil of yeast. This ancestral technique gives the wine its unique aromatic complexity and remarkable aging capacity.
