Food pairings

This Pernand-Vergelesses Village 2021 pairs ideally with poultry and white meats. It also goes very well with seafood, oysters, and freshwater fish in a white sauce. Gruyère-style cheeses, certain aged goat cheeses, as well as seafood pasta also make excellent pairings.

The estate

Founded in 1859 by Jean-Edouard Dupard, a cooper by trade, the Jean Chartron estate is one of the most historic properties in Puligny-Montrachet. The estate now spans 14.5 hectares across the finest terroirs of the Côte de Beaune, in Burgundy. Jean-Michel Chartron, the fifth generation at the helm, oversees the winemaking with a philosophy focused on respecting the terroir and minimal intervention. His sister, Anne-Laure, supervises all vineyard operations with a strong commitment to environmental preservation. The estate holds Haute Valeur Environnementale certification and has practiced organic viticulture for more than a decade.

The vineyard

This Pernand-Vergelesses Village comes from parcels located at the foot of the Corton hill, on the western side of this renowned hillside. The appellation is characterized by a diversity of soils depending on altitude: the lower sections feature clay-limestone soils mixed with siliceous remnants, while the mid-slopes offer stony limestone. The highest parcels, particularly well suited to Chardonnay, lie on brown or yellowish marls. The vines benefit from east or south-facing exposures, at elevations between 250 and 300 meters. This unique geographic setting gives Pernand-Vergelesses wines their distinctive mineral character and remarkable aging ability.

The vintage

The 2021 vintage will be remembered as one of the most challenging in the recent history of Burgundy. A devastating frost on April 5, followed by repeated episodes of sub-zero temperatures, struck the vineyards just as buds had begun to break. Yield losses reached 30 to 50% across the region, with declines of up to 80% for the white wines of the Côte de Beaune. The summer that followed proved cool and damp, with heavy rains from late June to early July creating significant pressure from fungal diseases. Despite these extreme conditions, the harvested grapes showed a remarkable balance between phenolic ripeness, sugar levels, and acidity, giving rise to wines in a classic style reminiscent of the vintages of the 1970s and 1980s.

Vinification and aging

The Pernand-Vergelesses Village 2021 is made according to the estate’s traditional methods, favoring purity and the expression of terroir. The wines are vinified and aged in oak barrels in the estate’s cellars, where temperature and humidity are constantly controlled. Jean-Michel Chartron favors very clean juices and exercises precise control over fermentations. Aging takes place on lees with a measured proportion of new barrels, helping preserve the appellation’s characteristic minerality and freshness.
