Booths clearly has a clientele prepared to spend on fine wines if they genuinely match that description, and Drouhin’s classy, cellar-worthy but currently à point white Burgundy certainly does: a wine of burgeoning richness and oatmealy substance, but with a bright, steely swish of fresh fruit and acidity.
