Appearance
A beautiful ruby-coloured robe.

Nose
The bouquet reveals enticing aromas of morello cherry and liquorice, delicately enhanced by a subtle hint of menthol.

Palate
The attack reveals a perfectly harmonious wine with smooth, well-integrated tannins. Touches of undergrowth emerge with elegance before giving way to a lingering finish marked by flavours of cherry stone.

Food and wine pairings

This red wine will be particularly enjoyed with full-flavoured meats such as wild boar with cranberries, salmis of woodcock or a delicious truffled duck shepherd's pie. It also pairs wonderfully with noble poultry such as capon, as well as creamy cheeses like Brillat-Savarin.

Serving and cellaring

To fully appreciate the aromatic palette of this Chambolle-Musigny 1er cru "Les Chatelots" 2011, it is recommended to serve it at a temperature between 15 and 17°C.

The estate

Founded in 1797, Maison Louis Latour is a true institution in Burgundy. Located in the heart of Aloxe-Corton, this family-owned and independent estate is now run by Florent Latour. The domain stretches over some fifty hectares and boasts the largest area of Grands Crus in the Côte d'Or. A passionate advocate of environmentally respectful viticulture, the house also stands out for its unique expertise: it is the only producer in the region to own its own cooperage, thereby ensuring perfect mastery over the ageing of its wines.

The vineyard

The "Les Chatelots" climat lies within the prestigious Chambolle-Musigny appellation, renowned for producing wines of great finesse. Its name refers to the water-retention capacity of its soils during the former floods of the Grône river. The vines, with an average age of 35 years, thrive on a clay-limestone terroir that lends the wine all its elegance and delicate aromas. Yields are carefully controlled at around 35 hl/ha and the grapes are hand-picked.

Vinification and ageing

The making of this Chambolle-Musigny 1er cru "Les Chatelots" 2011 begins with a traditional fermentation carried out in open vats, followed by a fully completed malolactic fermentation. The wine then benefits from ageing lasting 10 to 12 months. This process takes place in medium-toast French oak barrels, sourced from the estate's own cooperage, with a proportion of 40% new barrels.

Grape variety

This cuvée is made from 100% Pinot Noir.
