Tasting Notes

Appearance
This wine reveals a particularly deep colour, with purple and magenta hues. Its core is impenetrable, while offering superb luminous highlights.

Nose
Remarkably expressive and profound, the aromatic bouquet opens with intense notes of black and blue fruits, such as blackcurrant, blueberry, blackberry and ripe plum. It then gains complexity with touches of aniseed, black olive, rhubarb and graphite. The ageing process reveals itself through perfectly integrated oaky notes, evoking cedar, sandalwood, cigar box, vanilla and dark chocolate.

Palate
The palate offers a remarkable presence and great density, without ever feeling heavy. The texture proves fine and elegant, supported by ripe, precise and perfectly integrated tannins. The balance is masterful between the power of the fruit and a bright acidity that brings great energy. Flavours of blue fruits, cocoa and spices stretch into an exceptionally long finish.

Food and Wine Pairing
To accompany this great red wine, favour rich and flavourful meats. It will pair wonderfully with roast suckling pig, a fine grilled piece of aged beef, or game in reduced sauce such as venison. Roast lamb served with mushrooms or truffles will also be an excellent choice. To end the meal, it will beautifully enhance well-aged hard cheeses, such as an aged Comté or a cheddar. It is advisable to avoid overly delicate or heavily spiced dishes.

Serving and Ageing
In order to release its full complexity, a long decanting of several hours is essential before serving. The ideal tasting temperature is between 16 and 18°C. Crafted for a very long evolution, the Bin 707 Cabernet Sauvignon 2024 is a wine built for extended cellaring, with its peak estimated at approximately between 2028 and 2060.

Penfolds' Masterful Expression of Cabernet Sauvignon in Southern Australia

The Estate
Founded in 1844 by Doctor Christopher Rawson Penfold and his wife Mary, Penfolds is a true icon of winemaking in Southern Australia. Originally focused on wines intended for medicinal purposes, the estate has evolved to become a global benchmark, renowned for its mastery of multi-regional blending. Now led by chief winemaker Peter Gago, this Australian estate belongs to the Treasury Wine Estates group. It stands out for its absolute rigour, not hesitating to halt production of its greatest cuvées if the quality of the grapes is not deemed optimal.

The Vineyard
True to the House's philosophy, the grapes come from several outstanding terroirs located in Southern Australia. For this edition, the fruit was rigorously selected from the regions of Coonawarra, the Barossa Valley and Padthaway. This multi-regional approach combines the structure and freshness of Coonawarra with the generosity and depth of the other areas, ensuring remarkable stylistic consistency.

The Vintage
The climatic conditions of 2024 were particularly favourable, resulting in moderate vine vigour. This growing cycle produced small berries with excellent concentration and optimal phenolic ripeness. Coonawarra's Cabernet proved exceptional that year, offering a tannic structure that was both firm and remarkably precise.

Winemaking and Ageing
In keeping with the House's signature style, the Bin 707 Cabernet Sauvignon 2024 undergoes an extended ageing process. The wine matured for 16 months exclusively in large-format American oak barrels (hogsheads), 100% new. This choice of full ageing in new oak helps to build the characteristic power and aromatic complexity of this exceptional cuvée.
