The estate
Founded in 1831 in Monthélie by Bernard Bichot, the Albert Bichot House is today one of the oldest family-owned wine businesses in Bourgogne. Run since 1996 by Albéric Bichot, the sixth generation at the head of the company, the House oversees more than 100 hectares of vines spread across six outstanding estates throughout Bourgogne. Domaine Long-Depaquit, acquired by Albert Bichot in 1970, is one of the largest of these estates. Located in Chablis, it benefits from a historic heritage dating back to the Cistercian monks of Pontigny and stands out for its environmental commitment, notably through the HVE Level 3 certification obtained in 2019.
The vineyard
The Climat Les Vaucopins stretches along the right bank of the Serein, in the commune of Chichée, about three kilometers southeast of Chablis. This premier cru benefits from an exceptional terroir composed of shallow, remarkably free-draining Kimmeridgian clay-limestone marl soils. Southern and western exposure gives the vineyard generous sunshine, encouraging optimal ripening of the grapes. The estate’s parcels, averaging around 30 years old, feature varied topography alternating between plateau, steep slopes, and a small valley, creating a mosaic of microclimates within the climat.
Vinification and aging
The Chablis 1er Cru "Les Vaucopins" Domaine Long-Depaquit 2024 is crafted according to a non-interventionist philosophy that favors an authentic expression of the terroir. After carefully managed harvesting, vinification takes place with rigorous yield control. The wine then undergoes twelve months of aging in carefully selected oak barrels, with restrained use of new oak in order to preserve the mineral purity characteristic of the climat. This approach enables the wine to develop complexity while maintaining its freshness and its Chablis identity.
